Omg! We have been cooking this in India for centuries now! Instead of baking it, we make pancakes (Besan Cheelas) for breakfast. Or for anytime of the day meal!

Did you know that you can fry this batter? It is the same as Japanese okonomiyaki. They do use egg in the batter and usually cabbage. But the word in Japanese means something like " whatever you have" which is what you are saying use whatever veggies you have. For the Okonomiyaki, the batter is a little thinner like for pancakes and you don't need the egg.
I make okonomiyaki on my griddle. No oil & no eggs. 😉
I do make a version of this on the griddle and it works great. I’ll have to look that dish up though.

I love making frittatas. I make it in a pie tin or a spring form pan. Since I moved I haven't been able to find chick pea flour so I figured out that one cup of chickpea flour is 92g so if you don't have chickpea flour you can soak 92g or 3.25 ounces of whole chickpeas in 3/4 cup water for about 5 hours then blend the chickpeas and the soak water to make the batter. It makes a somewhat thick batter so if it's too thick just add a little more water. Then mix in the veggies and spices, place in a pie tin or muffin tins and bake.
@flattlandmontgomery1524 I can't find chickpea flour either - I live abroad. When you say to soak the chickpeas, are they dried beans or from the can?
@@shannonwatkins4579 dried beans. You can soak them and then blend them, or you can grind the beans into a flour, I've done that with my coffee grinder, it's just easier for me to soak the beans. If you've ever made lentil flat bread, it's the same process, that's where I got the idea from.
Try an Indian store if you have one near you. It’s also called besan.

Great recipe guys! I make something similar to this but my batter is made with soaked uncooked brown rice and chickpeas instead of the flour. I also bake it in a large baking dish instead of muffins. My favorite veggie combo is corn, tomatoes, peas, black olives, hearts of palm and oregano. It tastes really good. I'll definitely try you version 🤗😋. Thank you for sharing 🙏
Do you blend the rice and chickpeas after soaking them? I can't find chickpea flour where I live so I soak the chickpeas and blend them to make the batter.

I’m going to try those frittatas! I’ve been loving my broth powder! The other day I needed a quick breakfast, I can’t eat carbs in the morning sadly, I’ll have a hypoglycemic reaction, but I took some garbanzo beans and hot water and blended in the vitamix with the broth powder. It made a delicious thick morning soup. I’m kinda throwing it in everything my friend.

I'm making these ASAP for sure! already got the ingredients on hand. I might be naughty and add some vegan cheddar cheese, or some vegan feta and do a mediterranean thing with some olives and tomatoes. absolutely adore recipes like this one. a nice base that never fails, and you can choose your own adventure every time.

Well…That was inspirational ❤. I had a bag of ‘Santa Fe Blend’ from the Dollar Tree (onions, pepper, corn, black beans) in the freezer and a couple of cups of a DIY Just Egg (made from split mung beans) leftover in the fridge. Nuked the veg, let cool, added the fake Just Egg, salsa and black salt. Instant frittatas, not a knife or cutting board in sight. 😂. Thanks for the idea. 🙏

(Abby typing) Who do voodoo like you do? Nobody. That's why I buy your "Voodoo seasoning" and also the Fiesta and Nooch etc. Also great veggie broth mix. I made the broth and added some salt, more Nooch and lemon juice and took it to work to sip out of my stainless steel cup.

so more like an omelette with veggies in it.
I would probably describe yours as
mini-quiches but that is because
quiches are ubiquitous in Europe
Do you use oil? I would expect this to stick terribly in the skillet without oil.

Huh, maybe I got something wrong. I found these to have a noticeable bitterness to them, which is undoubtedly the chickpea flour. Oh, and since I didn't have a silicon muffin pan, I used paper cupcake liners..... don't....do....this. Even when completely cooled, it was a gruesome task getting them out of the paper. All in all, probably won't make these again.
