OMG, I just made these yesterday, and they are by far, the tastiest muffins I have ever eaten, including from restaurants and bakeries! I did have that tense moment you mentioned when the mixture seemed way too thick to ever drip or scoop into the muffin pan, but after working in the zucchini, it transformed into the delicious, workable batter that produced 12 amazing gems of goodness!
I'm looking forward to trying many more of your recipes, presented in a carefree and whimsical fashion- very entertaining and informative.

I’ve been watching your videos for over a year now. You remind me a lot of Julia Child: classic flavors; a relaxed, reassuring attitude that says “you can do this too!”; and a sense of humor that lets you leave in a few funny little mistakes here and there. The last one is important in my opinion, it shows that it’s not a big deal if you screw up, just keep going.

Made these yesterday, and they turned out great. I used shredded almonds that I already had in the pantry instead of walnuts. Next I’ll add cranberries for added texture.

Love it! Would like to add that elevation affects the baking time as well. I live at a higher elevation and I bake things longer than when I visit my dad, who lives at a lower elevation, and bake things for him.

We made these yesterday with some minor tweaks. Came out great!
Only today I discovered your channel…. and just made your muffins substituting vanilla extract with almond (that’s what I happen to have on hand), reducing slightly the amount of zucchini and adding some fresh red currants to add little zestiness. Amazingly delicious…. Will be sharing it with my elderly neighbours who provided me with the zucchini (they are not well). Thank you so much!

I Love this muffin recipe! Thank you for sharing. 🙏💖💥🕊. When zucchini is not available or too expensive (here where I live) , I substitute it with 2 cups of grated apples and on top of that, add 1 cup of (drained) fruits from my preserves, like:aronia berries, black currants, plums, also frozen lingonberries, or forest blueberries, often mixing them…Wow, they are delicious! Today, I had some extra carrots, so instead of fruit, to the apples I added grated carrots with raisins . They are also delicious.
This got me: 😆@6:42 “...to my cupcakes.... *gasp* they’re muffins!”

I like these kinds of muffins, as well as carrot, oat, and berry muffins. A girl once told me that I like old people's muffins. XD I was so proud of myself. :D
This was an amazing recipe so I doubled the recipe to make jumbo sized muffins and I added a Cinnamon streusel topping instead of nuts because we have a nut allergy in the family it was amazing I also used a bit less sugar and I used 1/2 butter 1/2 oil.
My neighbor makes these muffins for christmas every year and I've been dying to get her recipe!! And now I think I found it 😎

Hey John, I’m making a wedding cake 2 months from now and I was wondering what would be the best icing to use, butter cream or royal icing, does the egg white melt over time?
