love the crumb shot on the muffins as you pull it apart. wow. many recipes I've seen have a crumb that looks like bubbly sponge. I prefer the cushiony foam appearance. there's a coffee shop in Canada that has the bestest textured muffins. it looks exactly like yours when you rip into one. have you tried baking them with cake flour? would they turn out even fluffier?
Thanks! I prefer a cushiony texture too and I tested this recipe so many times to get that. I am also in Canada! Maybe we have superior muffins here? Haha! I have not tried using cake flour but I would imagine they might turn out too fragile and fall apart. Creaming the butter a little bit more in the beginning might help though :)

I'm patiently waiting for timho to bring back the outrageously expensive s'mores dream cookie. I accidentally added coconut yoghurt instead of plain and they were so delicious too. These are the best fluffiest blueberry muffin recipes on UA-cam ! I have tried most of them and this is hands down the most straight forward but tastiest like a bakery ! :)

Great question! You can use either type of cream, but dilute it with with water (50/50 mix) or the batter will be too heavy. You can certainly add banana; just reduce the amount of blueberries to compensate for the added banana. Just one banana should be enough. I hope this helped :)

@@yourstruly699 Yes you can keep the batter in the fridge for freshly baked muffins, but not for more than 2-3 days maximum. After that it starts to separate. You can freeze the batter for up to 3 months :)
@@ICookAndPaint have you ever tried to freeze muffin batter and cook it at a later date? i’ve seen some people say to freeze the cooked muffin and reheat, but that doesn’t sound very good, id imagine a lot of moisture is lost when reheating. i’ve also heard people say it’s better to freeze the cooked muffin as opposed to the batter, i assume because it has something to do with the baking powder becoming less effective if not cooked shortly after adding to the batter? but idk, your recipe easily yields the best looking blueberry muffins i’ve seen on youtube and i’d love to freeze the batter to have these beauties on demand, but i’m not sure how their quality would actually compare to when they’re fresh
@@yourstruly699 Thank you! Nothing compares to freshly baked when the batter is just made, but this batter does freeze well for up to 3 months. You can refrigerate the batter for 2-3 days too.
