    Ingredients 食材 (4 bread | 4個麵包)
    Dough 麵團:
    - 140ml room temperature milk 室温牛奶
    - 2 tbsp of demerara sugar 原蔗糖
    - 7g active dry yeast 乾酵母
    - 300g strong flour 高筋麵粉
    - 1 large egg 大雞蛋
    - 30g room temperature unsalted butter 室温無鹽牛油
    - ½ sea salt 海鹽
    Spring Onion Topping 香蔥:
    - 1 cup of chopped spring onion (not too fine) 蔥花
    - 2 tbsp of olive oil 初榨橄欖油
    - ¼ tsp of sea salt 海鹽
    - ¼ tsp of fine golden granulated sugar 幼砂糖
    - ¼ tsp of ground black pepper 黑胡椒粉
    - 1 tbsp of beaten egg 蛋液
    - 1 tbsp of black sesame 黑芝麻
    - egg wash 蛋液

    Hi friends, Here are a few tips for this breakfast bread. 1) If you make the bread in cold winter days, you could use warm milk. If it is a hot summer day, you could use cold milk. 2) Don't weave the bread too tight. Leave some room for the dough to expand during second proof. 3) If you want to have nice fresh bread for breakfast, do the second proof in the fridge overnight.     This looks great, I always get dough envy when I see people kneading it by hand. Your braid looks excellent and even. We love green onions so we will definitely like this bread.     Hi, can I braid it and leave it in the fridge overnight? If yes, do I bake it straight out from the fridge or leave it to cool for 10mins?

      Yes, you can. I would let it rest for 10 mins in room temperature before baking.

      If you keep the bread in the fridge for the second proof, it is better to let them come back to room temperature.

    How do you store the bread after baking? Do you leave it out or refrigerate?

      I don't have a chance to store this bread yet. We finished off all the bread every time. But I made 8 bagels today, 2 of them are stored in a food container in the kitchen. Will finish them off tomorrow morning.

    1.第二天早,麵包由雪櫃取出可立即入爐,還是要等到室溫才入爐焗?
    2.第二次發酵一小時和雪一晚相比,麵包口感有分別嗎?

      我一早起來就會把麵包拿出來,然後才預熱烤箱,準備蛋液和蔥花,大概15分鐘進烤箱吧。我吃不出什麼分別。 :)

      不要烤太久噢,如果想顏色深一點蛋液只用蛋黃,另外初榨橄欖油也會讓麵包顏色比較深。這款麵包應該是鬆軟才對噢,別烤乾了。 :)
