Sorry for the silly question, but why do you have to make it into balls, let it rise, then flatten it out again and reform into a ball to rise again? Does it make a difference in the texture if you only leave it to rise once?
This recipe turned out so well. I didn't use cream cheese but opted for goat cheese and butter. A ratio of approx 35g goat cheese and 15g butter. They still turned out perfect. Will definitely be making them again.

Hi Apron. We just had these for dinner. I made some changes to the recipe which I'm including here. I don't have egg, so replaced with a full tablespoon of thick curd. I added only half the yeast as I cold fermented the dough in the frig for 24 hours. In the final rolling of the buns I added a teaspoon of cheddar cream cheese as a filling. I brushed with milk before baking. My family hardly touched anything for dinner, feasting on these super soft buns. Many, many thanks.

This was an excellent recipe. I used 100ml of milk though, and I only had 200g of plain flour, so I topped up with cake flour and milk powder. Very fluffy, soft and delicious. Love this recipe. Thank you!

Hi, I am trying your recipe now, I let it rest for 1 hour. I am using machine to this recipe...in the video it's mentioning mix 10-15 menit in 2 speed...I see my dough doesn't want to mix well with this speed so I increased it until speed 8. The result is the dough still sticky and won't be elastic....but now I rest it for 1 hours... I am wondering it's can be work??? Or I have to send it back to my mixer to kneading again until comes elastic???

I made these buns for the first time today and my family absolutely loved it! For the lukewarm milk, I didn't have a thermometer so I microwaved cold milk for 30 seconds!

1.
溫鮮奶 lukewarm milk 150ml+
加上
即溶酵母 instant yeast 5g / 1/2Tbsp
放置5分钟,激活酵母。奶用温鲜奶,不要太凉也不要太热,太凉会让酵母活性变低,太热把酵母烫死了。
2.
然后加
全蛋 whole egg 1 (50g+- per egg)
奶油乳酪 cream cheese 50g / 1/4cup
高筋面粉 bread flour 300g / 2,1/8cup
细砂糖 caster sugar 30g / 1/8cup
海鹽 sea salt 2.5g / 1/2tsp
厨师机开2档揉面10-15分钟
和好的面团放在容器里,盖上盖子(视频里是盖了盖子)或者湿布,静置一个小时或者等到面团变成一开始的两倍大

案板上放一些面粉防粘。把面团拿出来,用指压的方式把面团压扁,压成圆形(视频里Apron压得很园,赞!我压成了近似长方形,反正也能分割)
分成小份(视频里分了十二份),然后用向内折叠的方法做成小面球。
盖上布,让面球静置15分钟
我觉得Apron处理面团的手法很赞,这里可能多看几遍学习手法。
4.
烤盘里垫上烤纸。
醒好的面团小球先用指头压扁,然后用向内叠的方式,再做成面球。
把面球放在烤盘里,盖上湿布。静置一个小时或者等到面团变成一开始的两倍大。
筛上一些面粉(感觉是装饰用)
5.
摄氏180度,华式356度,烤12到15分钟。
