@@kirstytran7507 I did about a 6-7 hour proof only because I wanted to cook it first thing, turns out it was just the perfect amount cause another hour longer, in my case, would've been over proofed and yeasty. Might be different for you. After the proofing I just followed the rest of the video, which was shaping and letting it rest (just on the counter top this time) and then bake. 😃

I've tried making this recipe today, and I don't know where I went wrong. The dough was extremely sticky and just would not come together - I've made milk bread lots of times before but with bread flour exclusively, this is my first time using AP. I live in South Asia so I have access to maida, which I believe has a higher protein content compared to AP in the states, so I had expected the dough to work. I mixed on medium low speed for twenty minutes and when it was still very sticky I let my mixer work the dough a bit longer, around 40 minutes but it just wouldn't get less sticky. I ended up adding two tablespoons of flour to work the dough, and left it to proof just now. I have no idea if adding flour towards the end like that was a bad idea, it was a desperate measure really. I'm going to bake it and I hope it still turns out almost as good as everyone's attempts here. I really want to make this again and would appreciate everyone's comments on what I could have possibly done wrong and what I can do next time.
Milk is going to make a dough more sticky than using water. But it is also gonna make it more fluffy...just add more flour but not too much because you will have dense, tough bread

I use Tang Zhong for all my breads. Especially heavier breads like my Killer Bread with lots of seeds and part whole-wheat benefits from increased fluffyness and stays soft longer

The video they show all purpose but the best type of flour to use is bread flour. I find the recipes here don't use the same yield as bread flour

Hi Tiffy! Would you be able to clarify if the master dough needs water in addition to the milk? In the blog recipe, there is water but the UA-cam video does not show adding of water. I just wanted to double check since I am planning to make this soon!!! Looks so amazingly delicious!

I use Tang Zhong for all my breads. Especially heavier breads like my Killer Bread with lots of seeds and part whole-wheat benefits from increased fluffyness and stays soft longer
