✔ INGREDIENTS:
2 eggplants
Olive oil
Salt and pepper
sweet paprika
Origan
🔹
1 onion
olive oil
2 peppers
2 cloves of garlic
salt and pepper
Minced meat 300g
Sweet paprika
Cumin
Ginger
coriander
Tomato puree 250g
150ml water
🔹
Mozzarella 150g
Parmesan 60g
Dried oregano
Olive oil
1st Cooking: Bake at 180 ° C for about 20 minutes
2nd Cooking: Put back in the oven at 180 ° C for about 15 minutes.

As a single person cooking only for myself, I made an abbreviated version of this with just one eggplant. Instead of cooking the bell peppers and onions on the stove with meat, I diced them very, very small, and sprinkled them on top of the slices of eggplant to cook in my toaster oven. I had prepped the eggplant by slicing and salting, and putting them in a large colander for the water to drip off onto a plate a half hour before cooking. Then I added all the spices to olive oil, mixed well with a spoon, and brushed on both sides of the eggplant slices. Then I sprinkled the mix of yellow, orange and red bell peppers and onions onto the top of the eggplant slices. I cooked them for about 15 minutes, then added goat cheese and cooked for another 10 minutes. Wonderful! It really brought out the flavors of the bell pepper. I used parchment paper on the tray.

This recipe looks really good, so I just made it ..... and all I can say is WOW!!! 😍 10 out of 10! It's meaty and cheesy and the flavors meld together beautifully! This recipe is definitely a keeper! In fact, it's so good that I'm thinking of reworking the recipe into a casserole and bringing it to my sister's for Christmas! She'll love it!
