Great theory! Lead me to a bit of an epiphany that I had not considered before. Perhaps gargoyles (such as the bell tower boss and the one in Anor Londo) are Chaos Demons. You see, I had never considered Morne was a chaos demon because I always assumed he was a gargoyle. In the Design Works interview, I think it was Miyazaki who says that the bell Gargoyles are from Carim. Morne is from Carim.. so I figured Morne is probably a gargoyle. And I've been looking for clues as to wtf gargoyles are.. are they automatons powered by magic?... and now it seems so obvious. I mean, they breath fire... besides dragon-kin that's firmly in demon/pyromancer territory. They seem like several creatures mushed together which the Sanctuary guardian's soul suggests is a trait of Demons. And there's precedence of demons working for the gods and/or Way of White by way of the lesser bat wing demons. And this plays well with your theory that Velka was a Chaos Witch. Considering Velka's connections to and influence in Carim it could explain why there are demons imbedded in Carim society if she was in fact formerly a demon matriarch.

I have this head-cannon lore theory the early Way of White was very welcoming to non-humans like Witches, Giants and Demons. The lesser bat wing demons like you've said are a good example too. The Jpn descriptions also state the lesser bat wing demons live in Anor Londo instead of wandering Anor Londo. And if gargoyles are chaos demons as well, it would indicate Chaos demons and Anor Londo had no problem living together. It wouldn't surprise me either if Carim was full of Chaos Demons living peacefully too. As a random note, I also believe Smough is a Chaos Demon.

7:59 Coincidentally I was doing a Dark Souls III randomiser playthrough a couple of months ago; the Deacons of the Deep appeared in the place of the Demon Prince and their name became "Demon Deacons". I guess the randomiser was trying to clue me in on this translation detail! ;)

Nice theory. Gargoyles kind of bridge the gap between Demons and Drakes. Centipede Demon was originally intended to be fought where the Bell Gargoyles are. I got to thinking; why are Quelaag and her sister topless? The only lore-sensible reason I can see is that they would be attempting to imitate Dragons.
That would make sense if Quelaag and her sisters were attempting to imitate Dragons. I've always assumed some of the demons came from Dragon corpses as well so that goes in line too.

And Lost Izalith is full of dragon-butts. Also, the Fair Lady's demon eggs might be related to the "Petrified Egg" in DS2, and the "World Egg" in The Ringed City - if not causally, then conceptually.

Kind of offtopic but do you think the souls games share a common vocabulary or concepts with the rest of fromsoftware games? For example dragons in Elden Ring being similar to the dragons in Dark Souls? I say this because you seem to tie in the three games using shared word meanings between the Souls games that appears consistent, idk 🤷♂️
I would say yes. A lot of the same vocab is used throughout their games. A good example is the hollows from dark souls series and dredglings from demon souls. Both use the shared word, which is bouja亡者.

Seathe has been trying to make a dragon by similar means, but Gwyn, witnessed a means to keep the First Flame lit. He has his own Demons/Half Dragons, the Winges ones, and Gargoyles right off the top of my head. They result from the act of Kindling a Great Soul, when primordial forces are most potent, when the Age of Ancients is nearest in the Cycle
