【My mom's Xiao Long Bao Recipe】Two Secrets to Juicy Soup Dumplings. TRICKS FOR BEGINNERS!

  • IMPORTANT: This recipe makes 16 dumpling and the filling for each dumpling is 1 tablespoon. (This is very important in ensure success, please follow precisely :) )
    What makes this recipe special are 2 things:
    1. The dough recipe that makes it incredibly easy to fold the pleats
    2. The secret technique my mom created to avoid the hassle of having to make the "meat jelly" traditionally used for getting the soup in the soup dumplings.
    I'm also kind of proud of my origami paper folding :p Anyway, I really hope it helped you understand the technique a bit better and if you end up trying this, send me your picture to my insta! @fennys_table : )
    Ingredients:
    Flour 100g (All purpose)
    Oil 1Tbsp (Neutral, not olive oil)
    Water 1/4 cup
    finely minced pork (medium fat)200g
    minced ginger 1tsp
    white pepper 1/4 tsp
    Maggi soy sauce 1tsp
    salt 1/2 tsp
    sugar 1/4 tsp
    sesame oil 1/4 tsp
    fish sauce 1/2 teaspoon
    chicken stock 3/4 cup
    cooking wine 1/2 Tbsp

    Sorry I made a mistake when I said 1/2 cup of water for the dough, it's 1/4 cup! Please follow as written in the recipe (Description box!)

      1 cup is what CC? In US 1 cup is 236cc. But in Japan 1 cup is 200cc. What is yours? Thanks.

      Hi, pretty girl you ever try to freeze your xiao long bao? I wanted to make a lot n freeze some to eat any other days. Will the dumpling be soupy anymore after freezing.

    Hi Fenny. I’m so excited to see your another mom’s recipe here. Just a quick check, do you use half a cup or a quarter cup of water for the dough ? In the video, you mentioned half a cup but down in the description box is a quarter cup. I tried to make these kind of dumpling before, it was a terrible failure. Things didn’t go to the way it supposed to. However, after watching your video with every detail and helpful tip, I would like to step out my comfort zone and give it a try again.     Wish to express my sincere gratitude for the tips. I applied the “Snowflake principle” on the fried peanut dumpling dough (炸油角子, 100% flour, 30% oil and 30% water). It works well and save a lot of hassle. Good thinking on the paper demo. Best regards to you and your family. 恭喜发财

    Stirring in one direction! I didn’t know about this until learning about dumplings. It breaks the myosin in the proteins. Making a sticky filling that’s bouncy and tender.
    Do this when you make fish balls, and they’ll be bouncy :)

    Just a little tip: Let them sit there for couple of minutes before opening the lid , let it cool down a little bit. The dumplings won't be shrinking when you open the lid.

      Yes you are right for the normal baos! But for the soup dumplings, you do want them to shrink like that! : )

      @@mymomschineserecipes855 Yes, the shape is not a big issue, but the wrap also suck up some of the broth when it shrinks all of a sudden. The puffed ones normally more juicy . Just my opinion.
