3/4 cup bread flour
1/4 cup + 2 tablespoons AP Flour
1/4 cup + 3 tablespoons boiling water, little more or less
1 1/2 teaspoons oil
Soup Jelly:
1 1/2 teaspoons vegan pork bouillon powder, or vegetable bouillon powder (amzn.to/2zXirwG)
2 slices ginger
1/2 green onion
2/3 cup vegetable stock
3/4 teaspoon agar (amzn.to/2gLr58O)
Filling:
1/2 teaspoon rice wine (amzn.to/2icrLEE)
1/2 teaspoon sesame oil (amzn.to/2fqYIzQ)
1/3 teaspoon soy sauce
1/3 teaspoon sugar
pinch salt
pinch white pepper
1 green onion, minced
1/4 teaspoon grated ginger
- 4 tablespoons + 2 teaspoons wheat gluten (amzn.to/2yf1FLT)
- 2 teaspoons chickpea flour ((amzn.to/2yfTNtc))
- 2 tablespoons potato starch ((amzn.to/2x5wX2M))
- 1/3 teaspoon vegan pork powder or vegetable bouillon powder (amzn.to/2zXirwG)
- 2 tablespoons vegetable oil
- 2-3 tablespoons water
Dipping Sauce

I feel like baozi and their many variations are easily my favorite food in the world, always was a pretty easy vegan dish because face it, you can put anything into fluffy steamed bread and it'll taste like a million bucks, especially with condiments. But these xiaolongbao definitely beg to be made, I'm always up for imitating textures and changing up recipes. Do you have a chuanr substitute? Or lamb in general? I never bothered looking into skewers with a springy, juicy texture, but that sure seems something that almost matches my enthusiasm for baozi and friends. Or street food skewers and all that.

you are a genius. and i didn't know you're suppose to leak the dumpling, i thought it was to be put on the asian spoon and bitten from the top so you can suck all the juices from it first or so lol
What do you think about making the seitan and not mixing in the broth, but instead just putting a piece of the broth in the bottom of each dumpling?

Just a lil tip, probably be better to make the seitan first and then mince it or grind it a lot. But hey what do I know.
Can I use corn starch instead of agar?
I have an extremely bad reaction to anything with soy since I was discharged from the military before I would have a little reaction; so trying to find vegan recipes that don't have tofu or soy in it, has been crazy, I have tried your recipe, using the soy-free sot sauce and my relatives couldn't tell the difference

You can add some baking powder to the all purpose flour. You can find the measurements on Google. Hope I'm not too late

Can I replace potato starch with tapioca or corn startch? I have everything already except potato starch :(
I have tried it with all three kinds, tapioca works better than corn starch, but the potato starch works the best

Tronnie00 you can buy pre-made dumpling wrappers at most Asian markets. In NYC most regular supermarkets carry them in the international section.

I followed this recipe and it was a waste of time. The seitan had no taste and I could barely tell the difference between it and the dough, it got mixed up after cooking
you could just use marinated smashed tofu instead of trying to make fake meat. it won’t absorb the broth....otherwise very good recipe.
