Yes vegetarian one would be awesome! I like to use bamboo shoot + tofu + a veggie (pea shoot, kale, lettuce root, etc.) And yes, I thought of you when I made this dough! The number one thing is to let it rise to the point where it doubles in size! (baking powder, warm water, fully bloomed yeast, sufficient wait time would all support this) There are 3 others tips specifically for Bao --> 10:30 tip 1 - First deflation 11:15 tip 2 - Second deflation 13:47 tip 3 - Temperature of filling Send me a pic when you make these :D

I watched your mom's Chinese verdion video, she said It's 150g all purpose flour but I find it doesn't have enough flour. On this video you said 1 full cup of flour and it seems the right amount. Could you please clarify just exactly how much is the flour you used in terms of weight (different countries have different measurements as one full cup).
