i think one of the writers/bill said this or maybe it's heavy fan speculation but the consensus is that after sally slaps barry and he basically snaps in that moment if she didn't change the script and he want and choked her, he probably would have killed her from rage. sally saves her own life there.
Would like to point out that the 1st season used Macbeth as the allegory for the season and this season they used Swim Instructors. In Swim Instructors, JT teaches a girl how to swim, which later saves her life from drowning(Mayrbek) and he gets his own comeuppance when he seeks revenge(Barry trying to kill Fuches and undoing all his work this season to go on the straight and narrow)
She didn’t tell the truth, but I don’t think she lied. She panicked and her shame took over. She played out her ideal scenario without realizing it in real time.

Sally said she was gonna tell the truth and she told something else. Everyone in the crowd recieved a lie regardless of her intentions.
I love this episode. It sets up the entire rest of the series. I’ve noticed the reaction to Sally flipping the script is almost universally negative. I didn’t feel that way. I thought she, in that moment, played out how she had always wanted it to go, what she was ashamed of not doing all this time. It’s powerful and sad and scary. The other big thing for me is the assault on the monastery. This is where the show commits to not glorifying violence. Barry killing everyone isn’t fun, or cool, or exciting. It’s shocking, ugly, and awful. You don’t want to see it, but you also can’t look away.
Barry didn't kill anyone the entire season until this episode. Dude just lost it and it lowkey is the beat that gets us all the way to the end of the show. Just fantastic stuff.
