In Jersey it's Taylor Ham and Trenton Pork Roll. Taylor Ham is smaller in diameter and more highly seasoned while Trenton Pork Roll is "sweeter". Both make for tremendous sandwiches with egg & cheese on a New York hard roll..
There's ZERO difference between "Taylor ham" and "pork roll," except for what local people call the end product-they are the EXACT same thing, and we all buy from the same two companies in Trenton and call it what we call it, regardless of the producer. The fact that the creator of this video ate pork roll unfried is making me lose my mind. That should NEVER happen. But you're absolutely right that pork roll is delicious.

But, that name has been prohibited since the 1906, when that year's F&D law decided the product does not meat the specifications for "ham". It beats me why, unlike those of us from So. Jersey, No. Jerseans refuse to read the "Pork Roll" on the pkg label. I guess it's that Kleenex vs tissue thing. Plus, the Taylor Provisions Co makes both the Taylor & the Trenton brands, the latter being approximatly the same size...but described as both slightly spicier, but less tangy, than the original Taylor brand product. Apparently, since some people who are not used to the "tangy" taste may object to it, the Trenton brand is actually the one that's used more in restaurants. It is another popular brand, Case (also from around Trenton) that is a separate company, which takes advantage of both consumer tastes by offering tangy & mild versions. In fact, there are at least a half dozen other NJ companies, large & small, that make pork roll, each insisting theirs is the best. (...then there's the Hatfield product, that's so bland and soggy that it should be prohibited from being called "pork roll").
Happy Thanksgiving Xeta! They all sound salty. I like a ham steak once in a while. Ham steak cooked in butter. Cubed up small, sautéed in butter with peas, onions diced small then tossed with ditalini pasta. Everything is about the same size. That was always a quick and easy dinner to make after work. Of course then you sprinkle some pecorino romano cheese on the pasta. Looking forward to the next episode.
I think to get the best taste test would be to take a drink of water in between bites. Rising out the flavor of the previous food would allow you to taste the next food better because if you didn't, the tongue would already be accostomed to the original flavor. It's the reason why if you eat something sweet first, then eat an a sweet orange that's only mildly sour, the sourness is much stronger.
At least you have more than one to choose from, only other is pressed ham and spam here. The pressed ham is soooo nasty it used to be good but they changed it years ago to much fat. And then there’s spam. Yeah spam and eggs, spam sandwich, spam and noodles of some sort but that’s it. Usually a sandwich for me maybe once every two years. But if the apocalypse comes I guess I’d eat more spam.🤣🤣🤣🤣
First of all, you are obviously not used to fermented salami's or sausage...as "lactic acid" and "starter culture" is one phrase, not two different ingredients. This refers to types of "good" bacterial cultures that turns sugars into lactic acid, which gives pork roll its "tanginess and cheeses, yogurt, pickles & sauerkraut a "sharp" taste . Comparing pork roll to those other two products is closer to comparing oranges to grapefruit or bologna to capicola...both good if you like them, but very different products. Plus, in addition to being fermented, Taylor & other brands of true pork roll are smoked, unlike the other two products you tested. Finally, pork roll should be fried more than you did, such that an inch or so of the perimeter is browned, which creates additional flavor from caramelization of the sugar in the product, and the Maillard reaction of its protein. If you only heat it, but don't brown it, it's like the difference between boiled & roast chicken. While it's a cooked product, safe to eat right out of the package, no-one eats pork roll that way, any more than they would do so with hot dogs (which are also pre-cooked).
