You forgot to mention there may be a screw or two to be removed also. I put a mirror behind to see it. Came out a lot easier with the screw out. Didn't have to take the toilet out!
This is just for demo purposes. As long as you turn off the water supply (turn off your pump) you should have no issues replacing the water valve while the toilet is still installed. If you do not drain your water line residual water will come out when disconnected. Just make sure you have a few extra towels (will be clean fresh water).
I had a really hard time getting the hose off, it looked like it was heated on. I was going to replace that hose piece something from Lowes and 2 hose clamps. Should I be ok in doing so?

mine had a screw holding it in on the bottom. it took a mirror to find it.
