i think it's poetic cinema that everyone in the test kitchen hates bell peppers except brad and priya, I guess people with chaotic energy like bell peppers

The limes that you're buying aren't ripe enough! Try feeling them at the grocery store, they should be softer at the feel!
the softer, smoother the skin, the riper they are! also, roll them before cutting and squeezing :)
The pops of orange in this video (the aprons, brad's hat, the peppers etc) are very satisfying.

I love Priya so much!!! Her recipes are the ones I tend to make the most, because they're easy to follow and cheap, it's more about the spices!! Which is good for someone on a budget.

Indian food usually has a much deeper flavour profile with more complex spice blends. Most of Priyas recipes are simplified versions and appear to be Americanised Indian food. They're probably a good introduction to Indian flavours for those that have never tried Indian food before and have always felt a little intimidated.

I think that lot of non-Indians (or non-desi peeps) think that Indian food is very complex with its 13264933 spices and "chhaunk" and masalas, etc. However, everyday Indian cooking is often low on oil (at least in our household), simple and also healthy. I think it's quite smart that Priya is showcasing the simple recipes rather than the usual celebratory Indian dishes (which are pretty rich). Chat-jaldi dishes ftw!

Absolutely! Whenever I'm having a group of people around it's usually Indian food that I cook. It's so healthy and filling and a curry can be so simple that you get to splash out making accompaniments. And folk are always impressed.

I swear every time I watch a BA vid I want to comment on how delightful they are. You guys firstly have great creative ideas and then you bring a relaxed atmosphere.
I only have 2 oils stocked in my house for general use Olive Oil (my favorite) and grapeseed oil (what I do my monthly Cast Iron seasoning with) all other oils I buy on a needed basis. I don't use vegetable or canola oil unless I have no other choice, and I cook everything I normally use oil for using Olive Oil

I remember when Priya first started doing videos, people FLIPPED OUT because she used olive oil instead of ghee/vegetable oil.
I watched this first thing this morning and I had to make it! I made a few substitutions as I didn't want to go to the store but it came out great. Mmmm the burned bits. I used ground cumin and I was out of fennel seed so I used a generic italian spices blend as it has a similar flavor profile, and I used lemon instead of lime. Big hit with my SO (and me).
This would be good for a meatless monday!

I make a dish very similar to this that is my favorite breakfast! Its olive oil with potatoes that a little burnt, chopped bell pepper and onion, and scrambled egg, along with a flour tortilla!! Sometimes I add shredded cheese too. I never thought of adding spices to the olive oil and onion, and adding the peanuts and lime. Gonna try this recipe next time!!
