- Priya is back in the Bon Appétit Test Kitchen to make pav bhaji, a popular Indian street food. The recipe is made of two parts: the 'pav' (in this case Martin's Potato Rolls) and the 'bhaji' (vegetable gravy). These two parts come together to make something like a vegetarian sloppy joe!

Haha I made that mistake yesterday 😂 luckily we were able to scrub some of the stain off 😂
At the risk of sharing an unpopular opinion: I like that BA is attempting to make indian food accessible for people across all backgrounds and make it less intimidating. As an indian, I see nothing wrong with this. I've lived in areas where there was absolutely no access to traditional indian spices and food. The local temple even had to use tortillas because they couldn't find rotis. It was frustrating and I had to make do with what I could find. I am incredibly happy that BA is opting for inclusion of more cultural chefs and recipes. It is really great to see POC bringing their cuisines to this platform.

well that's true except the temple was run by American volunteers and did not have a dedicated cook. Unfortunately a lot of smaller towns do not have the same resources, money, dedicated staff, or access to ingredients @@idek3881
@@idek3881 bruh many temples don't have dedicated staff let alone volunteers. Making masses of rotis requires experience that many men don't have. I say men because some temples do not allow women in their kitchens. Hell my nearest temple cant even keep a permanent priest
imagine if I posted a recipe for chocolate cake but then added no chocolate or cocoa powder and served a vanilla cake in the end, then I advertised it as chocolate cake to all my followers who had only heard of chocolate cake but had no clue what it looks like. That is what she is doing here. No problem with this recipe but calling it Pav Bhaji is a huge stretch of anyone's imagination
my mom always taught me indian food is about the cooking style and the way you prepare it. there's a lot of different indian twists and spins on the recipes, but if you want to call it by a different name because it's not authentic enough for you that's ok. pav bhaji is just mixed and curried veggies after all. I'm just happy people are talking about Indian food that isn't just tikka masala. too many good dishes out there to argue about what goes in pav bhaji. @@amymendoza3340
Additional tips for people who want to try this:
1) Use onions, bell pepper IN bhaji for "street cred". Add less potatoes as well. You can include any other meaty and "indiany" veggies too(just find stuff in your fridge and throw it in)
2) Browning onions after oil gives it some sweetness and all the bhajis I've had in my childhood had onions that were cooked in, as well as some freshly chopped onion garnish at the end.
3) It is generally customary to add ground spices AFTER onion, not directly into the oil(as is done here) since it is much less likely to get bitter by burning. Additionally, it will meld into the browning onions imparting some serious flavour.
4) Olive oil gives indian foods a whack flavour since it jars against the strong spices. I prefer neutral oils like sunflower.

Yeah, same as what kevin said, those smashburgers are amazing and my new favorite burger. It's like an in-n-out burger on steroids. I don't remember if this sauce was a part of her recipe or not, but a burger sauce made from equal parts ketchup, mustard, mayo, relish, then equal parts turmeric, paprika, garlic powder, and onion powder is amazing with it.

People saying this isn't Pav Bhaji are missing the point of Bon Appetit and cooking in general. You see these comments everywhere on this channel. This is a test kitchen, these are individuals creating dishes they know and how they want to. You want your own Pav Bhaji or bacon or whatever? Make it yourself, otherwise learn something new and adapt your own recipe. That's what cooking is about.
They are actually not missing the point, but your self-righteousness might be missing a whole lot of flavors. Muting and omission is NOT being creative or innovative. This is a sorry flavorless excuse for a pav bhaji.

If you want perfectly beautiful kitchen equipment, the only thing you have to do is never cook. I like when my skillets get a little bit of oil sheen and my spatulas get a bit stained, because it means that life has happened and good food has been served in my home.

I also love my microwave - potatoes, squash, sprouts, rice, pasta - I use it for so much, and it's especially great for single people who don't want to make a huge batch of something on the stove.

Pav bhaji is a street food dish in India..while the recipe may differ slightly for every family, what gives pav bhaji its taste is the typical spice mix, which can be bought in any Indian store (or diy) and lots of butter. Since Priya is not using either here, lot of people are disappointed. This recipe is still delicious and ofcourse who doesn't love Priya 😊

@Ashley .. absolutely true ! This tastes even better when all the veggies are sauteed in butter instead of oil ! And the traditional recipe calls for red onions to be sauteed along with the ones in Priya's recipe (and used raw as a garnish as well), one can add green bell peppers, boiled beetroots for added color and balance out the spice (she used like bare minimum here ... but chili powder is used by the tablespoon when sauteing + paprika for more color ) Ooh and I must mention garlic which adds another dimension of flavor

I like the content posted on this channel. It kind of gives an insight about different people, their food and the different flavours, spices and techniques used by them but after watching this version of pav bhaji and being an Indian who likes pav bhaji a lot, I can say that "there is a lot that has not been covered in this recipe".

@@TheOsel123 exactly where does she even say it is an authentic recipe? Her whole segment is based on making Indian cuisine easy and accessible to someone who is not very used to the strong amount of spices and heat. Adding garam masala/pav bhaji masala or adding a lot of vegetables would make it pretty difficult to replicate what she created. A lot of people don't have the wide variety of spices that most Indians have stocked up always. Besides, though she is Indian, she grew up in the US and understands what people there have access to.

@@amymendoza3340 Amy is totallly right. Pav Bhaji is a Mumbai classic. If you serve Prya's recipe here, most won't even recognise it as Pav Bhaji. Bhaji must be red in colour and have more tomatos. Call this anything but Pav Bhaji.

Making real pav bhaji takes long due to pressure cooking the mix. They prob didn't have the time to do this so she made a quicker version and something less intimidating to make for people new to the dish

Brit Indian here who lives to eat Pav Bhaji and yes this version wouldn't pass muster in our house, but I'm pretty sure the Italian/Thai/Chinese etc. dishes that I've made wouldn't go down to well with anyone who'd grown up cooking and eating these dishes either. I'm learning (always!) and am very grateful for recipes of this ilk that help us sample different cuisines in our own home, paring down the ingredients so that the cuisine is accessible to people without having to track down specialist ingredients which can be off-putting. Especially if you're on a budget. Also, as someone who grew up being shunned at school for 'smelling funny' (i.e. of Indian food). I'm thrilled that people would take interest enough to watch this video and try it out at home. Thanks Priya, I'm off to hunt down the rest of your videos to see if I can learn anything new. :)

Looks great! My mom makes this all the time and this is by far my favorite recipe ever. Her recipe is a little bit more "saucy" if you will, I think the ratio of potatoes
to tomatoes and water is a little different but this still looks awesome! She also makes enough for 10 people every time she makes it so we always have leftovers and this is one of those dishes that tastes twice as good the next day!

Pav bhaji is a complex medley of both vegetables and spices. I really enjoy Priya's dishes but this recipe doesn't do any justice to what a pav bhaji is supposed to be.
