- Join Priya Krishna in the Bon Appétit Test kitchen as she makes Kadhi. Kadhi is similar in texture to cream of [fill in the blank] soup, but with no cream, and…well…better. All you need to make it are yogurt, chickpea flour, and spices. But don’t let the simplicity fool you: Kadhi is both deeply comforting and insanely complex in its flavor, like a cozy blanket draped over a hot bowl of white rice. The exact recipe varies from region to region in India, and sometimes includes add-ins, like chickpea flour-based fritters called pakoras, but we like it thick, rich, and spice-forward, with a pleasant tanginess at the end. If you don’t like peppercorn flavor, feel free to nix them or cut the amount in half.

You can make Curd rice too. It's delicious comfort food to eat on a cold night. Easy to prepare and tasty af.

That wellness trend thing is so on point. Every health trend food that america latches on to is just a normal, staple ingredient in some other culture.
Eventually it even wraps back around to normal, staple ingredients in american culture. Chipotle is trying to brand baby spinach and romaine lettuce as "super greens" now.

@@diydiscover You can hear her tongue hit the top of her mouth when she's saying it. Curry, she doesn't do that. It's very hard to catch or replicate if you're not used to it.
It's not the spelling that throws people off, it's the near pronounciation.

In Trinidad, we call this ‘Carrhee’. No pakoras would have aunties fuming.
We indians have it too with pakoras, and this one as well. They're both kadhi to us , just different types .
In South India, we have it with 3/4 cup grated coconut, 1/2 an inch ginger, 3 to 4 small shallots, 3 green chillies, turmeric and a pinch of cumin blended to paste and mixed to yoghurt; finally mildly heated in oil tempered with black mustard, thinly sliced shallots, fenugreek powder, curry leaves and dried red chillies . Salt to taste. No simmering or boiling what so ever. It must be just warm to touch. Finger dip test advisable.

This is so interesting to me - in Gujarati cuisine, my mum makes kadhi as more of a thinner-consistency spicy, tangy, salty drink rather than a soup. We often have kadhi over Khichdi or as a separate drink on the side with eg. bhinda + rotli

my grandma always makes kadhi priya’s way but we usually have it the way you do!
Yup yup. There’s a sweet version of kadhi too with gor (jaggery) which also goes great with khichdi.
In UP its made her way just with plain pakodas.
We make it this way too, and we only use curry leaves, cumin seeds and mustard seeds at the beginning, and we put garlic, chilli ginger directly into the yogurt mixture. Khichdi Kadhi is the best on a cold day!

To be fair, those things that float in a kadhi are 10-20 size bigger than a peppercorn

It's okay you can add whatever accompanying foods you want to the dish some people eat it as a sweet food and mentioned adding a type of sugar to the dish and others mentioned adding onions on top.
Yeah, but the dish is kadhi pakora, you can always show the viewers how to make it and then express your personal feelings towards it.

Kadhi is prepared differently in U.P. (neither too thick nor too thin, with pakoras), Gujarat ( sweet and pale yellow, almost white in colour), Uttarakhand (a bit thicker that U.P. kadhi, often topped with grated cucubmer / spinach leaves / spring onion greens and Rajasthan ( thinner and without pakoras).

She used kashmiri chillies in the kadhi. They don't have much of the heat as other Indian chillies. They are used mostly for colour in India.

@@mattsnyder4754 you guys are taking about difference chilies lmao the kashmiri was what she put in the pot in powder form, so I think the other poster was saying she's not really an authority on Indian spice tolerance since she used what essentially amounts to paprika in the actual dish itself.

We have a similar yogurt-based soup which we eat with rice called Mansaf. If we make it with liquid yogurt we also prefer it really sour, but we usually make it with a dried yogurt-y substance called Jameed. There's lots of similarities but a lot is different as well.
Priya’s show needs to just be her cooking things on 1.5x speed while she narrates the recipe instructions lightning fast, pausing only to make a phone call to her family.
The end bit reminded me of Claire's favorite part: reading the ingredients.

super dependent on the region of India and all have slightly different techniques for making it or when to incorporate it. (I personally think she put wayyy too much ghee in it for my comfort, and I am used to my kadhi being more about creaminess rather than the focus going to tanginess, I also just don't like the mouth feel of whole cumin seeds, which I know Andy also has a problem with, and I was okay with how much she put in the beginning but then she added even more in her chonk and I died)

It's weird. Every bulk food shop in my area has stocked it for years. I first bought some years ago when I decided to make onion pakoras. My favorite supply retired and closed shop.

I love kadhi especially in winter but it’s such a time consuming dish if you want to do it right I mean. Kadhi without pakoras is like a half made dish like making Mac and cheese without the cheese.
Amal, if you have the thin crispy paratha with the kadhi it makes up for the lack of pakore. Or use normal chappatti and pulp it into the curry and eat with a fork. Or finally makki di rotti.
Aaron Blakely actually Afghan people eat it with chappati and makki ki roti and they call it kadru but still sticking with it kadhi is half made without pakoras I mean the pakoras are where the goodness is at. That’s just my opinion.

Bhindi is my favourite veggie. Could eat it like a fruit. So the happiest day of my life was when the college mess had left over bhindi at the end of the month and made a dense bhindi kadhi. Restaurants do dahi Bhindi and all but that kadhi bhindi was perfect.

I don’t think priya would cook rasam. Her mom most likely didn’t make for her as a kid. On a serious note, she can most certainly try...there’s plenty of recipes posted online, compiling and trying out 10 of them would give her enough knowledge to come to one conclusion or version, that’s what the test kitchen is for right? Hope she tries to put forward recipes outside her comfort zone

I even add stir fried potatoes, carrots, okra, cauliflower. I stir fry the vegetable separately and then add them to the kadhi. A great way to make my family have vegetables.

I absolutely hate the taste of turmeric if it isn't properly "cooked" before being mixed with liquid. I hate hate HATE it.
If you're one of me, just temper/cook the turmeric with the whole spices and then add in the yougurt + water mixture. It takes away that harsh turmeric flavour.

I love cooked whole peppercorns! My guilty childhood pleasure used to be eating the way overcooked veggies my mom would strain out of broth and I super loved it when a whole peppercorn that had boiled for hours was stuck on an onion or carrot piece. I'm so glad to hear I'm not the only one who likes eating them!

I bet you could also use a can of coconut cream for the fatty, rich creaminess, and add additional lime juice for the acidity.

A lot of Middle Eastern soups have yogurts in them too. Turkish, Kurdish, Arabic, Persian... You name it.
Just so everyone knows, this is not soup or a curry. This is used to mix with rice or eat with roti/naan and curry/pakoras. It is not a stand-alone dish.
