You're right. I use a grade 8 bolt with a nut screwed on first, followed by a hardened washer, Put a little grease on the threads of the bolt and screw it into the rivet nut. I hold the head of the bolt with a combination wrench and tighten the nut with a ratcheting combination wrench. Very simple to do, and it works every time.
Do you need a surface for it to squash against? I've got some little legs I can get a 5.9mm blind into but they are open end of box section so nothing for it to press against. Do you think I can apply enough force to compress it enough to stay tight in the hole? I feel like I can but I don't do this stuff normally. Noone sells 7mm threaded square inserts.
Almost there. Need a calibration indication to indicate how far the mechanism has travelled so the Rivnut thread is not stripped by over tightening. Good start though.

Is it me or when they break out the cut off wheel and the stick welder and proceed to weld with a series of tacks mean it’s time to move on to a different video. Seems to be way too many of these “fabricators” on UA-cam
Think if you’ve got all the tools to build this and know how to uses them then you won’t bother as you’ll be quite capable of installing a rivinut or it’s equivalent without this waste of time.

Did you know that you can do this simply by using the drill and the combination wrench?
....or buy a set for 20 bucks😮
There are other options to do that, but I think this device simulates the most expansive tools.
