i read somewhere that these restaurants are visited months before by a team, and they sign an agreement to keep things the way they were while filming.
Competition from microwave chains that mostly killed traditional places, and generations of palates ruined by processed convenient foods.
I think a lot of the chefs do it because they lack control to the kitchen and want Gordon to rip into the chef. They won't hide anything from him

@Hesson Sakhi You would be surprised at how much of it isn't scripted. Some of it is, of course, but it's not usually the owners who ask him to come, it's others who know they need a wake up call. The lady whose husband stole tips from his staff and shouted at/threw out customers who wanted refunds? That was very much not scripted, if the way she acted after the show was over and in the youtube comments of that episode was any indication.

He's actually a really nice guy but acts the way he does for the cameras and because he's been a chef for so long. He expects nothing less than the best because that's how he was taught to cook.

I hated that cook like dude it is not only your life you are ruining the lifeof others here..
He also didn't know when that chicken delivery was so I can only assume the worst and guess that that mistake of a chef's education got the last chicken delivery about last century with how wrong it looked
