Best way to find out what's really wrong with a restaurant, ask the waiting staff, they're the ones who pretty much 99.9% of the time are going to be completely honest and candid with you. I think it's great that Gordon ALWAYS gives waiting staff the most respect of anyone, as they are the ones who he knows are nothing to do with why the restaurant is failing, and he knows they'll be able to spill all the beans.

this is something very common in my current work and personal enviroment, both from my side and those around me. and honestly it has made me a much better man than i ever thought i could be, by embracing criticism instead of getting mad or freaking out at it when i personally didnt understand it.

Also I think desserts often tend to be better because unlike cooking, where the chefs can really play around (which is a good thing if you have a good chef and a bad thing if you have a bad one) and still have a dish, the bakers are probably more careful because they need the thing to actually bake properly. So they don't swing as far bland/overseasoned.

I mean honestly, how could you possible follow a recipe, when the fucking recipe is just reheating frozen food. The food is bland, overseasoned, or overcooked because there is no actual cooking involved. I've seen a ton of this show and in 99% of the cases it's just people cutting corners left and right with no respect for their craft or their customers, and in maybe 1% of the cases it was an actual bad cook screwing things up. In many cases this boils down to bad owners forcing their corner cutting on disheartened chefs degrading them to nothing more than McDonald's cooks reheating shit.
@@straikychan Oh definitely having a recipe will not save you, but at least in the show the baking elements often seem to cut down on people trying absolutely ridiculous things, which is often an issue. It is also usually outsourced in many of these places, so that helps as well. So it's not the solution but for some of these places it becomes their one saving grace because their pastry chef is not participating in the nonsense affecting the rest of the food (or again, it's being outsourced).

It's because a humble old lady would not succeed at opening or running a restaurant. But also, a business oriented big ego boss would not be able to maintain a restaurant. You need both. When it comes to business, you need a big ego, otherwise people will literally walk all over you. It's pretty cutthroat. But when it comes to creating anything, like a painting, or a song or a dish, you have to be humble.
If you are a server and the back of the house is serving crap, make them make it again. Don't accept it if it's shady. Or tell your expo to be more critical. Or go to a better restaurant. Never accept it if it's bad.

5:52 as a former chef, I actually sympathise with this. A traditional risotto has some bite on the rice, with a loose sauce. Your average unassuming customer though would assume it’s undercooked.

I love how almost every bad food was made by the owner and the good ones are made by the employees 😂💀
Also I think desserts often tend to be better because unlike cooking, where the chefs can really play around (which is a good thing if you have a good chef and a bad thing if you have a bad one) and still have a dish, the bakers are probably more careful because they need the thing to actually bake properly. So they don't swing as far bland/overseasoned.

I mean honestly, how could you possible follow a recipe, when the fucking recipe is just reheating frozen food. The food is bland, overseasoned, or overcooked because there is no actual cooking involved.
I've seen a ton of this show and in 99% of the cases it's just people cutting corners left and right with no respect for their craft or their customers, and in maybe 1% of the cases it was an actual bad cook screwing things up. In many cases this boils down to bad owners forcing their corner cutting on disheartened chefs degrading them to nothing more than McDonald's cooks reheating shit.
@@straikychan Oh definitely having a recipe will not save you, but at least in the show the baking elements often seem to cut down on people trying absolutely ridiculous things, which is often an issue. It is also usually outsourced in many of these places, so that helps as well. So it's not the solution but for some of these places it becomes their one saving grace because their pastry chef is not participating in the nonsense affecting the rest of the food (or again, it's being outsourced).

Ofcourse you're not automatically gonna assume it sucks just because Gordon walks in your restaurant. And these people have no problem accepting their food sucks when the hurting has healed a bit. It's because a humble old lady would not succeed at opening or running a restaurant. But also, a business oriented big ego boss would not be able to maintain a restaurant. You need both.
When it comes to business, you need a big ego, otherwise people will literally walk all over you. It's pretty cutthroat. But when it comes to creating anything, like a painting, or a song or a dish, you have to be humble.
I love how Gordon is so courteous to the front of house staff, even though he is being served horrible food. Take note people.
