Hey bro, Someone may have mentioned already but the reason it's still moving is the brain is in the tail. next time take a little bat or club and hit it on the tail. it's nervous system is in reverse from the tail to the head so cutting off the head means it can't bite but the rest of the body can still move.

Spending time in upstate NY in the Catskills back in the day... We caught many fresh water eels in the rivers and they can live with out a head for hours. The nerves keep firing for over 24 hours sometimes and it can be very difficult to skin or filet them. They do taste amazing, we used to smoke them.
We have eels in our stream, we used to catch them as kids, and then our children followed suit but haven’t had them for a few years. You’ve just inspired me with that recipe, looks delicious. That looked like a long fin eel which is bit more scarce than the short fin eel. If it was a long fin, it was literally a baby, they grow huge and are one of the largest eels in the world. Also unlike the short fin, it is only found in New Zealand. The short fin is also in Australia and the pacific islands.

There seems to be so much drama with family in the states All the time. I moved back to the states in 2013 and lasted 2 years. I just could not get back into the lifestyle in the states. I came back to New Zealand in 2015 and I will never go back to the states. You should come check it out
You can remove the slime before you clean your fish by using white distilled vinegar spray it on using a spray bottle. And letting it sit for 5 minutes give or take. Then Rinse it off using high-pressure from the garden hose. If still slimy repeat a second time. Makes cleaning your fish way easier it's not sliding around

I've only ever eaten eel once. I caught one at school camp when I was 9. We cooked it on the fire and ate it. It was pretty good. (An Australian river eel), It was about the same size as the one you caught.

Man when I was a kid growing up in New Brunswick (Canada) I caught lots of eels. We would catch big night crawlers after it rained and when it got dark we would start a fire on the riverbank to attract the eels. A hook and bobber with a nightcrawler on and you got a good time these things fight!! They will head to the bottom and twist around a rock or some weeds and it takes forever to get them tired. And just like you showed every one I ever cleaned would still be squirming in a bucket with no head and guts and hour later. crazy cool fish
River Eel are very Delicious. I catch em here at the Altamaha River, Georgia all the time just that size or larger. Surprisingly not many here eat them. I actually have grilled them and they are great fried too and usually Vietnamese Style. Very Enjoyable to watch X 💯

This is NOT a criticism, as I loved the episonde and my mouth was watering in all of the appropriate bits but... We have eels in the creek at our place. We feed them and have individual names for some of the larger ones. One of our party pieces when the kids and grandkids come over to visit is to put out food for the eels. The come up to us and we can get VERY close. They are great to photograph and video with the underwater camera. Eels are hugely long lived and one of the two species we have here (long finned eels) are declining. I have trouble considering eating eels now. Again, definitely not a criticism of the episode!
kaiora, i live in new zealand and you did a great job with preparing the tuna (fresh water eel) but you gotta try fly fishing for trout while your in newzealnd get a tour guide or go to rotorua and id be more then happy to take u to some local streams and show you how its done in nz :)
Pretty cool how the fish kept moving. Is probably hyperreflexic due to loss of inhibition of reflexes from the brain as the upper spinal cord was severed. Same thing can happen in humans with spinal cord or brain injuries - the brain naturally suppresses our reflexes to some extent, and when we lose the suppression reflexes can become stronger.

Yes Taku, we do have eels! The Eel river in Humboldt county is named for the freshwater eels, as a kid we got eels on the Trinity and Klamath rivers.

We actually do have river eel on the west coast. We’ll at least in Oregon called Lamprey eel.

There are fresh water eels in California, we used to catch them in streams when we went camping.
In the islands we bury them for about a 1/2 in sand. When we dig them out they are completely free of slime etc and ready to be cleaned.

Saute it with garlic and onions and pepper and when you are done put coconut milk on it and let it dry a bit with low fire . Thanks
