    Masala Sauce
    2 qt. Whole tomatoes with the juice, crushed
    6 oz. can tomato paste
    2 c. Onions, finely chopped
    1 jalapeño or Serrano pepper, minced
    1 T salt
    2 T dried cilantro or 6 T fresh cilantro
    2 T Garam Masala spice blend
    Optional seasoning: garlic powder, onion powder, coriander, ginger, chili powder
    Tikka Masala
    5-6 lbs chicken, cubed in 2” pieces, raw or par cooked

    Chana Masala
    2 lbs. dried garbanzo beans (chickpeas), soaked and par cooked

    Fill hot jars with meat chunks to 1" headspace or fill hot jars half full of chickpeas. Top off with hot sauce to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
    Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
    This recipe CANNOT be safely water bath or steam canned.
    Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

    To serve… combine 1/2 c. Heavy cream or coconut milk to 1 pint jar or 1 c. Each to 1 quart jar, heat through. Serve over rice with warm naan bread.

    Just opened a jar of this. Added a tsp of garam masala, cardamom and lots of fresh cilantro. Spooned it over jasmine rice. It tastes amazing!!! Thanks so much for this recipe since I wouldn’t have thought of changing that curry chicken to Tikka Masala!

    Thank you, Carol, for the highly detailed verbal and visual instructions, but especially for writing them down in the video description. There are more than a few popular canning UA-cam channels that don’t do this and it’s rather frustrating at times, but they always have time to jot down their affiliations with various companies. I don’t mind if they support worthy companies; I like that and it’s helpful to the community, but at least take the 5 minutes required to write the recipe in the description.     Looks great. Very safe canning instructions as well. I make a sweet potato, aubergine and chick pea curry and would love to can it but do not know if it is safe. Does anyone else?

    I canned the Chana Masala yesterday and decided to try it today. New to canning so still navigating the process and recipes ☺. Prepared with the coconut milk over rice and tastes great! Would definitely make this again.

    Want to try this so much. In my part of Ohio there are no pint jars. I was able to get a case of a pint and a half, would the time be for the quart or in between the pint and quart. Thank you my fellow Buckeye for all your videos so interesting. and new ideas.

    Never thought of canning tikka masala! So glad you did this video! I’ve made the chicken curry and it’s ok but this will be better! I’ve read in a cookbook of Urvashi Pitre when a dish is finished cooking to add some more spice. For instance, add some more garam masala, fresh cilantro, etc. Thanks so much for this video!

      I meant to add fresh herbs and spices when you open the jar to eat it! It will liven it up and taste like it was just made from scratch!

    When I can this I use the boxed Tikka Masala seasoning. It is inexpensive and has everything in it. Easy shortcut.

    Looks great Carol! Have you ever found that canning tomato products for 75 minutes gives an off flavor to the sauce? I made a bolognese sauce and it has a bit of an off taste to me; although hubby loves it. It could be the spices or ground beef but have seen one other person have a similar comment. Just curious what your experience has been. I love the idea of having these on the shelf ready to go. Thanks!

    Hi Carol, first off I'd like to say that I love your channel! I have found so many new ideas to add to my pantry. I do have a question though. I made the masala both ways tonight. It seems the sauce went in a bit too thick, I had to stir it around a lot to get it into the bottom of the jars. So now, I'm not sure how they should look but the jars don't really have a soupy look to them...more of a thick sloppy Joe look. Can you tell me If this is how they are supposed to look, or should I re-batch? I did have some left over sauce as well, so I put that into the freezer and will add it when I cook it if needed. The chicken one looks okay today, just the Chick Pea one seems a bit void of sauce. I think the beans absorbed the sauce. I only filled just over the half way mark but I guess it was a bit too thick.

      The starch from the chick peas probably added to the thickness. It’s fine as long as your jar is half filled with sauce 😊

      what I have heard is you take the longest processing time ingredient, that's in the recipe and use that for your canning time

    Friendly correction from an Indian: it is not Kana Masala, but Ch as in China. Channa.
