    Warm up your winter with this quick and easy Chicken Tortilla Soup recipe that's safe for canning. To thicken upon opening, stir 1 T. of cornmeal or masa into a bit of water then add to soup before heating. Bring to a simmer. Add tortilla strips (fresh or fried) and your favorite toppings and enjoy!

    3 boneless skinless chicken breasts, cooked and shredded or cubed
    12 c. stock, Chicken or Roasted Corn
    Chicken Stock: • Homemade Chicken Stock

    2 pints of Chipotle Black Beans or 2 15oz. cans of black beans
    Chipotle Black Beans: • Home Canned Chipotle B...
    6 c. chopped tomatoes, fresh or canned
    Canning Tomatoes: • Steam Canning Tomatoes...
    3 c. corn, fresh or frozen
    1 large onion, chopped
    1 jalapeno, chopped
    1 poblano pepper, chopped
    1 T. each dried Cilantro, Mexican Oregano and Seasoned Salt
    2 t. each Garlic powder, Smoked Paprika and Cumin
    Fill hot jars with hot soup to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
    Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
    This recipe CANNOT be safely water bath or steam canned.
    Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

    I love your channel and I can all sorts of your recipes. Now my family, every time they come over, they rid my pantry of my canned goods because it tastes so good. The better than bush Baked beans never last. I have to can huge batches of it. Thank you.

    Thank you so much for the recipe! I just finished my load of chicken tortilla soup, and they all sealed. It smells great! I spent this morning making the corn stock. Again, thanks for that recipe, as I had never heard of it before. I found it through your tortilla soup recipe, Then, once the corn stock finished, I used it directly in my tortilla soup canning. Since I don't eat beans, I added a bunch of veggies instead: celery, tomatoes, onions, carrots, corn from the roasted corn, and bell peppers. I am very excited to try it.

    Hi, I love your channel! I'm new to canning and want to make a tortilla soup. My question is about chicken. I know it's safe to raw pack chicken so I'm wondering if you can add raw chicken to this recipe? If not, why? Thanks for any advice you can provide about adding raw meat.

    Looks great! Do the beans get mushy after processing twice? That would be my only concern

    This soup tastes good except I dislike the chicken in it, very dry and don't like the texture. I plan to make this again without chicken and ad my canned chicken when ready to serve. I like the chicken that's canned raw. I like having canned food available, ready to go 💟

    I've made soup like this but did quick soak on dried beans.
    I layered the beans and chicken in the jars then filled with the soup mixture.
    I do that because it seems that if you scoop out of the pot where everything is together you get shorted on beans and chicken in some jars.
    I don't use canned beans because I think by double cooking them the texture would be too soft and mushy for my palate

    Who has plenty of corn stock? I dunno anyone that has that. There's never enough. . I do like all your changes. I saw this recipe and it didn't sound that great. Your substitutions would definitely make it so much better!

    Carol, when you use beans you have already canned don't they get super mushy? Could i just use fresh (meaning not cooked) beans?

      I had the same thought but I think they are fine in soup. I didn’t find the texture to be a problem here but you could certainly use soaked and par cooked dried beans 😊

    Carol- my canning manual says to bring the dial gauge up to 10 psi. It is a very old Presto canner and the 10 pound weight does not jiggle. I have heard you as well as others say if I am using a gauge to bring it to 11 pounds. As of late I have been bringing my gauge to 11 and sometimes it goes up to 12. I have been experiencing some run off and multiple non-sealing on my jars. Do you think I should follow the book recommendations and can at the 10 psi mark?? Until this year I have always canned at 10, but now I’m feeling a bit confused. Can you help set my mind at ease? Thank you.

      Hi! If you’re using a dial gauge canner the gauge should be checked annually. It might need replaced. But more importantly your psi is based on altitude so make sure you are canning for the correct altitude (maybe that’s in the Presto book??). I’ve always had an AA canner so I’m not well versed in Presto but it does sound like something is off. 😊

    I always use canned green chili peppers in my chicken tortilla soup. Do you think those are safe? Also, I a lot of times boil a whole chicken for my recipe. Would you have a measurement in cups of the chicken that's safe to use?

    What if in between putting your lids on the jars and the jars in the canner, The lids pop like they are sealing before I even get them in the canner?

    Love your video and I am so new to canning. I just bought an American Canner. My question is about your already canned beans that your using. For this recipe having already canned beans wouldn’t the beans become mush? Why wouldn’t you add in the soaked black beans into this recipe instead?

      Hi, the beans aren’t mushy but you could use soaked and par cooked beans if you prefer. It’s such a small amount here I’m not sure it’s worth the effort to do that unless you are making a lot of soup 😊

    I looked through comments and was wondering if you can substitute chop meat for the chicken? I didn't see that question. If so, how many cups do you think or lbs?

    Before I begin the preparation.........Can I saute the onions to give the soup a charred flavor? Can hominy replace the corn? Looks like I am becoming a tweaker too.

      I don’t recommend sautéing bc you would need to add some fat to do so which is only safe in tested recipes. Hominy isn’t recommended for home canning.

      @@carol-thriftychichousewife6231 I may have to put this recipe on hold until I get Mexican Oregano. I looked it up on Penzey's web site, and it is described as strong, pungent, and less sweet, great for chili. The Turkish Oregano that I have on hand lends a desirable sweetness to pasta sauces that would not complement chilis and southwestern cooking. Oh well, if this soup tastes as good as it looks I'll go through my jar of Mexican Oregano in no time.

    I just made and processed soup in quarts. Don’t know what I did wrong, but they all bubbled out and didn’t seal as a result. I left 1” headspace and finger tightened. So disheartened

      Don’t get disheartened or fear trying again. Did you de-bubble and wipe the rims before adding your lids?
