LEARN HOW TO MAKE A CRUNCHY GREEN PAPAYA SALAD RECIPE RIGHT AT HOME!
LAY HO LAY HO! I must warn you up front that this salad is incredibly delicious and extremely addictive. You may be tempted to enjoy this by itself or on a burger or in a taco. Join me in this episode and learn how to make a refreshingly crunchy green papaya salad recipe today!
Ingredients:
1 medium green papaya
25g Thai basil
25g mint
small piece ginger
1 Fuji apple
2 cups cherry tomatoes
2 pieces garlic
2 green chili peppers
1 red chili pepper
1 lime
1/3 cup rice vinegar
2 tbsp maple syrup
2 1/2 tbsp soy sauce
1 cup peanuts
Directions:
1. Peel the green papaya. Hold the papaya in one hand and the knife in the other. Then, very carefully and continuously chop at the papaya making lots of cuts (wear a non-cut glove if possible)
2. Carefully slice down the papaya making rustic looking shreds. Roll around the papaya and repeat until you see the inner seeds peeking through
3. Add the Thai basil and mint to the papaya. Very thinly slice the ginger and apple into matchsticks and add to the salad. Thinly slice the cherry tomatoes and add to the salad
4. Finely chop the garlic and chili peppers. Place them into a bowl along with the juice of 1 lime, rice vinegar, maple syrup, and soy sauce. Mix to combine
5. Pour the dressing onto the salad and mix to combine
6. Heat up a frying pan to medium heat and add in the peanuts. Toast for 4-5min. Then, transfer to a pestle and mortar. Coarsely crush the peanuts
7. Plate the salad and sprinkle some peanuts on top

One of my favorite parts about traveling through Thailand was trying all the different local variations of Som Tam. Some were spicy and fragrant, others were sour and funky. I love them all.

What a great method for shredding the green papaya, Wil. I’ve often resorted to my mandoline which does an ok job - certainly not like yours though! There is a busy but humble little Thai restaurant in Hong Kong’s Pacific Place mall on the 1st floor called “Thai Basil” that serves a great version of this (and an even better pomelo salad as well) that are quite extraordinary. I’ve learned that most Thai restaurants add fish sauce to these salads, so make sure you request no fish sauce whenever & wherever you order them. Have a great Sunday up there 👆, Wil! 😎
This is the traditional way of shredding papaya in Thailand, where papaya salad is practically the national dish.
Funny story... I was on a snorkeling trip in Thailand and we were served standard tourist food like bland fried rice, fried chicken, pineapple and watermelon. I noticed the kitchen staff were still preparing food and I asked what they were doing. I was told they were making their own lunch and with all smiles, they invited me into the kitchen. Rather than eating the crap they had just made for the tourists, they were making papaya salad. They let me try their papaya salad and taught me how to shred the papaya using a knife. (I don't remember anything about the snorkeling.)
@@DolceArdore someone who gets it! Another older gent in this comment section is saying how unsafe it is to cut it this way, so I suggested using a grater, but fron his response, he must be feeling a little cranky today.
@@belle3168 I also remember seeing the Thai aunties on the side of the street, gossiping with one another and not even looking down at the papaya in their hand while they hack away at it with their scarily huge knives. I'm sure most of them got a nasty cut way back when but rather than going the glove route, they simply developed mad skillz.
I generally prefer the texture of knife cut papaya to using a grating device, but I have to admit that I'm lacking in both skill and patience and often resort to using a grater.
Does your mandolin have different julienne options? Watch any Thai street food video where they're making this common street food dish. It's normal for them to not be wearing gloves and using this method to shred papaya. Holding the knife properly, paying attention while you're learning the method, getting into a rhythm, practice and experience can make you as good or better than any machine and here there is variation in the shreds which makes for more interesting texture. Hot Thai Kitchen has an amazing authentic green papaya salad that I make and it's absolutely delicious.
There’ a Thai tool called. Kiwi (I know - weird) that shreds papaya perfectly. No need for knives or gloves. Also saves bucket loads of time. Easily available online, and cheap. Do yourselves a favour…

"Palaa" the fish sauce, IS an acquired taste, but tell your chef to leave it out beforehand, so that it can be made to your taste !
I like it SPICY I know when it is spicy enough, when my nose and eyes, are running copiously !

In Vietnam, they don't pound the papaya down. They dress it like he does. I grew up eating various versions of it in Laos even though my family is Vietnamese...and yes, we pound it down in Laos. LOL!

There should be an Awesome button for your recipes. I really like how some of the elements are shredded and match-sticked. I feel like it enhances the dishes. I might be wrong, but it’s like it tastes better.
I know it's vegan, but you're missing out on that funk of that that fish sauce. It's what make papaya salad have this aroma and taste.
We have a vegan fish sauce at home, which is a lil funk, but not full funk. I like it

Why risk hacking a knife into your hand? Just use a shredding peeler. I've done that, and if the dressing is tasty, you'll alreadt have enough texture
I made this salad and I can definitely confirm that it is amazing. I substituted the peanuts for pine nuts. This salad has now made its way to my list of favorite foods….👍😘

Pickling in rice vinegar is delicious. Your method of cutting papaya is scary so I just cut it the old fashion way, deseeded the fruit, cut in slices. I don't need to have it in super thin slices. Taste the same at the end of the day.

In Thailand we have fruit salads. We use corn, grapes, apples instead of papaya, and fish sauce instead of soy sauce. We also pound all the ingredients in a mortar instead of mixing them.
Additionally, if you change from papaya to raw mango (sour), add sliced shallots (without nuts, lime, basil, mint, ginger) you'll get "mango salad", which is perfect to serve with jasmine rice and fried fish. (or fried tofu). Hope you like it :)
+ dry shrimp or salted egg

The papaya fruits in our garden are all supported by extra sized bras to prevent the strong winds from shaking them and dropping to the ground.

Fun fact: My girlfriend hates me when I put hot chillis on her papaya. It's definiely not for the faint of heart.
Som tam was my biggest culinary discovery of all times. I devoured kilograms of it whilst in Thailand. Add some sticky rice = absolute divinity. I haven't found green papaya as of yet over here, but I've done it with spiralized cucumber and carrots. Looovely.

Violet this is the recipe,,,She cut the green papaya and let it dry for a day or two then she will cook it with a little bit of water and sugar then when it was cook she add a little bit of baking soda to help caramelize the papaya then he let dry in wax paper it was so good 😊

Does the papaya keep after it's shredded? I'm usually only cooking for one or two and papayas are huge!
Don't shred the whole thing at once, just what you need. Keep it in the fridge and it will last longer.
It keeps very well ..several days and its still crispy
I made this salad today and it is DELICIOUS! I can't wait to have more tomorrow because I know it will be even better. May turn out to be my new go-to for parties since it is so unusual but I think will appeal to most people. Didn't realize until I was actually mixing it up that the dressing has no oil...BONUS! Weird recipe. The original dressing consists: lime juice, palm sugar, chilli, garlic, dried shrimps and fish sauce. No vinegar, no maple syrup.

I'll omit the ginger, soy sauce, basil & mint. Palm sugar instead of maple syrup & use Himalayan salt & tamarind.
Better to use the julienne peeler.

love this salad, I pound the small stuff in a salad mortar and I do add fish sauce, essential IMO. There are vegetarian varieties of "fish" sauce, I have not tried any, but some seem to be pretty good and close in flavor of the real thing.
Best I had was at a great Thai restaurant in Volcano on the Big Island, very traditional and if you asked for spicy, you got Thai spicy, not American spicy. We went for not so spicy and it was still quite hot, but not so that it burned all the flavors away.
Gonna make it again as soon as I get my hands on a green papaya again.
Looks great in the end! But just wanted to say that the julienning of the green papaya into strips using the knife looks like a lot of work (and wouldn’t be something most people, especially newbies can do either), intense skill and like you said rather dangerous. I wouldn’t personally do that either. Why haven’t you tried using a grater or shredder btw? A lot easier, faster and safer too. You might want to demo doing that than using a knife. ☺️

I've read conflicting information regarding the possible toxicity of unripe papaya.
Specifically, the papain and latex that is found in unripe papaya are said to be harmful to the esophagus, stomach, and digestive tract.
The reason I would like to know the answer is because I recently stumbled upon this dish while giving a local restaurant a try.
I fell in love with the flavors and textures instantly.
It would make me sad to think that something seemingly healthy could be a risk to my health.
All in moderation; I suppose.

As a Thai, this looks awesome, but personally I dont recommend adding Mint and Basil into it.
Personally I would add sweet corn into it for natural sweetness and extra texture.

Seeds of the pepper doesnt make it hot. The center white of the pepper otherwise called the placenta produce oils called capsaicin that will coat seeds and the pepper inners.
