I know that Neapolitan is traditionally chocolate, strawberry, and vanilla, but powdered dried raspberries would be great too! Add a little tartness. I love raspberry and chocolate combination.

The first recipe really is similar to a Malaysian kuih (dessert cake) called Kuih Bingka, the only difference is that it could be done with regular flour. Alvin you should try using pandan flavouring because pandan and coconut milk compliments each other!

I looked it up and it also kind of reminds me of bibingka with that kind of texture it has (no wonder the names are similar) that we have in the Philippines :0 I rlly wanna try it now it looks really good. also yes, pandan and coconut milk is so good together.

I only decided to put it on half because I have friends who don't like coconut - Alvin

Okay, so I haven't made mochi (though this DEFINITELY is inspiring me to make my own), but my most recent use of Mochiko flour was Scottish style shortbread cookies with ALL rice flour- they turned out SUPER delicate! I made cute little circles with a fun cris-cross pattern on top much like peanut butter cookies, but they were this pretty white color because of the flour itself. Super pretty & super tasty! ^_^

I love mochi! My first encounter with it was in China as dessert in a restaurant, it was pretty thin layer of mochi filled with cream and fruit and it was just so crazy good! Wish mochi was more popular in Sweden tbh, we have very expensive mochi ice cream in some larger stores, but for non ice cream mochi you’re lucky to find it in Asian grocery stores and those are few and far apart when it comes to actual Asian and not just middle eastern products...

i love making butter mochi and somewhat overcooking the edges to a crisp, then taking the middle part to a gathering and keeping the "burnt" edges for myself and watch how people will be taking my stash and then hit the "normal" mochi. people started watching for my stash, so now i bake it in smaller pans so everyone can have the "burnt" edges, more work for me but it's all about the joy of watching people loving what you made.
