Butter Mochi Recipe, taken from Aloha Kitchen by Alana Kysar amzn.to/2NsFCbm:
    4 large eggs
    2 tsp vanilla
    2 cups skim milk
    one 1-pound box Mochiko flour
    2 cups sugar
    2 tsp baking powder
    1/2 tsp kosher salt
    1/2 cup unsalted butter, melted
one 13 1/2-oz can coconut milk
    1/2 cup unsweetened shredded coconut
a few pinches flaky salt (optional)
Preheat the oven to 350º F. Grease a 9x13 inch baking pan with butter or oil.
In a bowl, whisk together the eggs, vanilla, and milk. In another larger bowl, whisk together the mochiko, sugar, baking powder, and kosher salt. Pour the wet ingredients into the dry ingredients and, with a wooden spoon, stir until well combined. Add the melted butter and coconut milk and mix until fully incorporated. Pour the mixture into the prepared pan and rap the pan on the counter a couple of times to bring any air bubbles up to the surface. Evenly sprinkle the shredded coconut on top of the mixture, a handful at a time, being careful not to jiggle the pan too much, as you want the coconut to stay on the top. Then sprinkle on a few pinches of the flaky salt, if desired.
Bake until the mochi is set and golden brown on top, about 1 hour. Set the pan on a wire rack and let cool completely before slicing into rectangles using a plastic knife to minimize sticking; I cut four columns and five rows to make twenty 2 1/4 by 2 1/2-inch pieces. If the knife seems to be sticking, rub it with a little unsalted butter or neutral oil. Store in an airtight container at room temperature for up to 3 days.

Tried this recipe last night and HOO BOY, this is AMAZING. I love mochi, sticky rice things, glutinous everything, so when I came across this recipe I was delighted. It's so gooood! Dense and chewy and buttery and coconutty. Hopefully the gluten-free friends that I made it for will also enjoy it! Thank you!

Thank you so very much for the great recipe. It turned out fabulously. I only had a brownie pan, so I poured the extra batter into a “cupcake” pan that had little square shapes in it. I have sooo much crust to eat! 😃 I’m an Aussie who used to live in Kaneohe, and among so many Hawaiian dishes that have missed is butter mochi. I won’t even get started on my craving lau lau w chili water & poi, or watercress & fried ahi, & Zippy’s chili. Thank you for giving me back sone precious memories of a truly beautiful time in my life. Mahalo 🌈🌺

Hello! Japanese/hawaiian person here. Butter mochi is not a “Hawaiian version” of mochi, exactly. It’s a Hawaiian dessert that includes the ingredients made for regular mochi. It’s like a mochi cake. But definitely one of my favorite desserts of all time. I exclude the coconut on top because I feel like it interferes with the lovely chewy texture.

Thank you for sharing your yummy butter Mochi one of my favs, I learned from my local friends in Kailua. I add salt to mine as well. I do the same with my coconut milk drink. Using a gal pitcher I use; 1 can coconut milk, 1 cup sugar more or less if preferred, little less than 1/2 tsp of salt I adjust mine to taste, fill with water mix well, chill and pour over ice it is truly delicious. The salt is the secret ingredient that takes this drink over the top.

I made butter mochi twice this year and brought some to my family and work but only like 5 people would try one so I ended up eating like 40 slices by myself haha :D I used the AllRecipies version and yeah they don't put salt or use coconut milk, which I ended up doing the second time I made them.
