Big fan of Martha’s. She does everything so elegantly and so well. Even her messy creations are classy! This recipe looks scrumptious. I will definitely make it as soon as I order a set of those lovely bowls. I’ve seen a variation on serving wherein one piece of the bread is lightly dipped in the broth then placed in the bottom of the bowl with a bit of cheese on top before adding the soup. Then the two pieces of bread, and all that wonderful cheese on top. It offers a pleasant little surprise when one gets to the bottom of the bowl.

Hello Marta, Thanks for sharing your recipe. Just 2 points: At the beginning, it's better to add th olive oil first before butter. Second one, add a drop of porto...it's amazing and replace flavor with maizena. Warm regards

Parmigiana-Reggiano works well , too. I like her selection of cheeses, too. There are no wrong answers for this marvelous soup.

Lol @ cutting onions pole to pole being unusual. Thats how you cut onion for cooking. You will literally get beaten in a kitchen if you try to cut them on the side. That is only for burgers
