I know watching her and the dishes she makes reminds me of when I used to live in CA 30 yrs. ago. When CA was a lot different than today! My brother-in-law was a fantastic cook! We ate totally differently here on the Southeast coast. And she captures both types of cooking. My brother-in-law is from Israel so he had great recipes, and then there was a lot of authentic and Street Mexican food. Not what they had here in the south 30yrs. ago! Taco Bell was the Mexican food here then! But life was easier and food was more healthy for you in Ca. back then. And you could grill out like normal people! She reminds me of people who get together with other people and grill out and hang out outside after dinner. Not like it is today. I don't know if you understand what I'm talking about. They are not allowed to grill out in CA anymore. Along with some other insane things! I'm so grateful we moved straight to the other coast when we did!! And I found her on UA-cam!

I'm a french Canadian. I regularly make the French onion soup (at least once a month). It's a classic at home. Rachel recipe is basically the same that I cooked for over 20 years. I use the same seasonings (bay leaf, thyme, salt and pepper). It's easy to adapt the recipe according to what you have at home. The crucial step is to caramelize the onions well. It makes a big difference in taste. As variations: 1) I sometimes replace the white wine with beer (any type works but I prefer a good amber ale...when making soup with beer I sometimes add 1/2 tsp Dijon mustard but I reduce to 1/2 tsp thyme 2) You can also have fun mixing red, yellow and white onions. I take what I have at home. It's a matter of taste but I always make the soup with beef broth. I recommand it. I like to use cheddar (old cheddar chesse is the best if you don't have gruyere)

When I was a young bride, we had a big group of friends unexpectedly drop in, and I had not done my groceries.... but ....I did have bread, cheese and a big bag of onions! So yes, made a huge pot of home made French onion soup. It was a massive hit! The guests loved it - said it was the best they ever had -and it was soooo easy to prepare. I made it just as you showed. What a nice lady...She reminds me of my Portuguese Grandma...Vovie...She was a wonderful cook and baker! She walked this 4yr. old to school every morning, and then after school to the Chicken butcher to buy one of the hanging chickens in the front window. I got to choose which one to get wrapped in newspaper, and then it off to the veggie market. I think that I may have been the first kid in America to wear a home made back pack to carry the groceries home. The meat market was the other way. We always went there on Thursday because our Church was half the way there, and we had to make sure to visit God, and light our candles, just to make sure that he saw me there! After al little kid needs all the help he can get living in this crazy world of Big People! On the way home she always spoke Portuguese to every neighbor sitting on their porch even though some of them were Polish or Hungarian, just to make sure that I knew the words, phrases and their names...I remember thinking that there were too many languages to learn for a little kid like me! It sure was a lot to learn for a 4 yr. old squirt, as I was known around the world back then. I miss them both Black Jack and Vovie so much.. Just a story from almost 70 years ago.

Having French heritage, my mom used to make this all the time and I do as well. Really spot on recipe. For those comfortable cooking with alcohol, I'd suggest a dash of cognac at the end. It adds depth and distinctive flavor.
You're right on the money on this one. I use a good quality cognac as well as white wine in equal amounts in the "beginning" as to evaporate the alcohol, and I find that combo to be the best!

It’s really worth the time caramelizing the onions. I love the developing flavor and your recipe looks delicious. The next time I make it I will do what a friend did and that is add in pearl onions (frozen variety) in the latter part of the cooking process. Just for fun and added interest!
Co-inky-dink! I just made a pot of Fr. Onion Soup TODAY! (it was overcast & drizzly here in Laguna CA... soup weather) I use Julia Child's recipe with some homemade beef/chicken stock I keep in the freezer. I add 2 cloves of garlic just because I like it....I see you do the same. For the wine I use dry French Vermouth and then some brandy at the end. Gruyerè cheese if I'm feeling flush, otherwise just Trader Joe's Swiss slices. And always TJ's Pecorino...just because I like the tang of sheep's milk cheese. A salad & glass of vino & good 2 go!❤

We take the end of the season pickles, peppers ,baby tomatoes, I add some garlic cloves, some spices. Top with a vinegar brine. I jar as many as I can. This is so good on the side with this soup. I use different herbs in my jars for flavor. I just love homemade cucumbers. We just spent the last few days clearing out the garden of what was left. We do chow chow too. Very delicious.🙂👍✌️🥰🤗👋. This recipe is almost identical to my French onion soup. The only difference is I don't add garlic to mine. I'm so glad you used Gruyere and not Swiss cheese like so many other videos I've seen. It's not quite soup weather for me; we're still in the 90's here in Las Vegas, but as soon as it gets cooler it will definitely be time for this wonderful soup!

I think that I may have been the first kid in America to wear a home made back pack to carry the groceries home.
The meat market was the other way. We always went there on Thursday because our Church was half the way there, and we had to make sure to visit God, and light our candles, just to make sure that he saw me there! After al little kid needs all the help he can get living in this crazy world of Big People! On the way home she always spoke Portuguese to every neighbor sitting on their porch even though some of them were Polish or Hungarian, just to make sure that I knew the words, phrases and their names...I remember thinking that there were too many languages to learn for a little kid like me! It sure was a lot to learn for a 4 yr. old squirt, as I was known around the world back then. I miss them both Black Jack and Vovie so much.. Just a story from almost 70 years ago.

Having French heritage, my mom used to make this all the time and I do as well. Really spot on recipe. For those comfortable cooking with alcohol, I'd suggest a dash of cognac at the end. It adds depth and distinctive flavor.
You're right on the money on this one. I use a good quality cognac as well as white wine in equal amounts in the "beginning" as to evaporate the alcohol, and I find that combo to be the best!

It’s really worth the time caramelizing the onions. I love the developing flavor and your recipe looks delicious. The next time I make it I will do what a friend did and that is add in pearl onions (frozen variety) in the latter part of the cooking process. Just for fun and added interest!

Co-inky-dink! I just made a pot of Fr. Onion Soup TODAY! (it was overcast & drizzly here in Laguna CA... soup weather) I use Julia Child's recipe with some homemade beef/chicken stock I keep in the freezer. I add 2 cloves of garlic just because I like it....I see you do the same. For the wine I use dry French Vermouth and then some brandy at the end. Gruyerè cheese if I'm feeling flush, otherwise just Trader Joe's Swiss slices. And always TJ's Pecorino...just because I like the tang of sheep's milk cheese. A salad & glass of vino & good 2 go!❤

We take the end of the season pickles, peppers ,baby tomatoes, I add some garlic cloves, some spices. Top with a vinegar brine. I jar as many as I can. This is so good on the side with this soup. I use different herbs in my jars for flavor. I just love homemade cucumbers. We just spent the last few days clearing out the garden of what was left. We do chow chow too. Very delicious.🙂👍✌️🥰🤗👋. This recipe is almost identical to my French onion soup. The only difference is I don't add garlic to mine. I'm so glad you used Gruyere and not Swiss cheese like so many other videos I've seen. It's not quite soup weather for me; we're still in the 90's here in Las Vegas, but as soon as it gets cooler it will definitely be time for this wonderful soup!
Adding garlic is not French, but a little I’m sure adds a nice layer of flavor and complexity.
