French onion soup has become a staple in my house this winter. It’s rich, tasty and easier to make than you might think. Check out the recipe below, follow along… and don’t forget to pick up a french stick (baguette) to go with it.

French Onion soup
50ml olive oil
100g unsalted butter
1.25kg peeled and sliced brown onions
150ml Brandy
2 tbsp flour
1L beef stock
2 bay leaves
6 dashes Maggi seasoning
10 dashes Worcestershire sauce
Salt and pepper
Baguette

My first father-in-law owned a “fancy” restaurant and made French Onion Soup with grated Swiss Cheese. Each serving was in its own individual ramekin topped with a delicious homemade crouton and then topped with a mound - A MOUND - of grated Swiss cheese. The cheese melted in & around the ramekin and was so delicious to pull off the side of the hot bowl - the very best cure for a hangover!!!! Nothing better!!! The cheese formed a crust around the sides of the bowl. It took an extra 25 minutes to serve as an appetizer but it was worth it.
I quit professional cooking after a decade because I had lost my passion your videos got me feeling the excitement for food again cheers man!!!
West Aucklander matt here I’ve never been good an cooking but since people like u Andy on UA-cam I’ve started experimenting with food an found it’s been coming out good but always use the knife to pick up my onions or garlic or cheese an can never pick up the whole lot the dough cutter would make life so much easyer
I take my hat of to all chefs cause it is hard work cooking but god dam u make it look easy an enjoyable.

I've been watching cooking shows since the 60s, when Julia Child's and the Galloping gourmet were ripping up the classics and drinking on air. I loved it! When I saw your shorts on TikTok, you reminded me so much of the fun those chefs had, I haven't seen that in forever! The last several years have been shows where people are screaming, insulting, competing, etc. It just got old, I dont want to watch Gorden Ramsey chew people up and spit them out, it's depressing and no fun. I loved your sense of humor and great technique. It seems like you are actually enjoying yourself. I'd be happy to check out your merch and support your channel whenever I can, thanks for bringing back the joy of cooking!

Today I've made your version of onion soup. It tastes divine. I skipped the Worshester sauce, and sticked with only Maggie sauce, and instead of Brandy, used Port Wine. ❤

You mentioned garlic soup being Asian.
There actually is a traditional garlic soup from Silesia, Poland called Wodzionka.
Simplicity at it's finest, it was made during rough times only to be enjoyed by modern day people all the same.

Yeah, also the ancient Roman/Greeks/Byzantines had garum, which is a fermented fish sauce (though it may not have been anchovies?).
Have something similar in the Czech Republic called česnečka.
Cant beat Ireland and Poland for their stews and soups.
There is also a garlic and almond soup from Spain, served cold (called Ajo Blanco, literally "white garlic"), it's definetely for the garlic fans and it is *heaven*

Make your own Worcestershire Sauce!! I’ve been wanting to make my own for a minute as well, but have had other projects ahead of it and would love to watch your process! I also work in a pizza restaurant in Yankton, South Dakota, USA and prefer nothing more than my hands and a scraper when it comes to handling dough and brilliant used with all around cooking!

Morning Andy one of my favourite Soups, back in the day when I was in London worked with a Head chef which got me using Guinness and Port in my French onion. Tell yah what mate give it a go makes a fantastic addition

I'd definitely buy one of those cutters! I've never used nor seen one with measuring marks on it, and I can imagine how that would be really useful in the kitchen, for cooking and baking both.

Andy, you are one of the best instructors on UA-cam. You really take the time to dig into the nuances, the weak points, and the details that so many chefs sort of gloss over. The way you went through the breaking down of the onions was so on point. Nobody really does that. Great job with this onion soup recipe. I'm gonna give it a go.

I am an American but the first, and only, food scraper I had was a Graham Kerr brand which I bought around 35 years ago. I lost the one I had when I moved back to California 5 years ago. I miss it very much. I would definitely purchase one from Andy.

that thing saved my wrists when i was a baker and i used to cut literal tons of butter. then i started using it for everything. also it keeps your knives a little sharper. amazing tool really!

On the note of soup, one of my favourite autumn soups is sweet potato and butternut squash. I put warming spices in it and it just feels good for what ails you. (I’m over in England so I’m starting to think about soup and warm comfort food meals)

I would buy that dough knife/ scraper for my partner. He loves cooking and cooks 99% of our meals and is always looking at new recipes to try. He recently got a pizza stone for his bbq and has been playing with home made dough recipes so he would def use it! You can also freeze your baguettes before you slice them, then cut them with a sharp bread knife. Much easier to cut. Keeps its shape really well
