My aunt used to make this kind of candy back in the 60’s and she made all different kinds of candy!! I didn’t appreciate it back then like I do now! I’m giving away cookies and candy and even some pepper roni bread this year as gifts!! I’m retired and I just don’t have money to go out and buy a bunch of stuff but I’ve always got good food and stock of things to make stuff with Thank God❤🙏

I just realized I have not made hard candy since moving into our new home which means I’ve never made it in anything other than the exact type of pan you are using, a old stock pressure cooker pan from my grandmother. I can’t use it now due to having induction cooktop. Now I’m scared. I guess I’ll use my enameled cast iron sauce pot

I think everybody has to experience the cinnamon burn once to appreciate the precaution. I took it seriously first time I made it--didn't inhale, but skin was way too close and it burned my face and hands (was red for about an hour)! If you work with chilis, this is a similar precaution. DEFINITELY USE OVEN VENT HOOD!!! Also recommend long sleeves and gloves when mixing in oil. Did two batches tonight, no medical emergencies, lol!!!

I have a Pyrex measuring cup sitting on a pan of boiling water to get hot and transfer candy to that to pour into molds. Much easier to pour than from the pan😅

Made your candy and was good but need to add a little more cinnamon oil . As not quite enough for me, I have a 4oz bottle so may do 1 1/2 tsp, next time. But, the flavor is really good. You are right about the fumes, I went outside to stur it as was nice and windy. Still got a wiff of it, whew.
Yes ma'am and I just poured it from the pot I made it in. It was not an easy task but it did work. Then I took a icing spatula and scraped across the top to remove the excess. I am going to buy me a pot with a pour spout on it for easier pouring
@marylovecountryliving if you find one let me know. I have checked Amazon, Walmart, Roth restaurant supply, I was thinking a metal funnel. There is a controlled funnel metal like you use for pancake batter but quite large. I found some metal measure cups with a pour spout. If you use that. TEMU has a silicone cup for chocolate but it was hot to handle. Thinking about making a mitten to fit the cup. There is a pour funnel that has a long spout that works great for the small molds for chocolate. I have several molds. Been making rock candy for years. This is first year using molds. I have made a lot of suckered so far. Using molds like you did and scraping excess off. Thank you and good luck.
When you take your candy out of the molds, if you put them into a colander and then swish them around over the sink, a lot of the sharp edges and excess candy will fall out through the holes and you won’t have all of those little sharp pieces sticking in your hands. It doesn’t get it all, but it gets most of it. Nice video… where did you get the lifesaver molds? My molds dont have the holes and i like those😊

Instead of using molds (which are vey cute) I put a sheet of parchment paper on my cookie sheets and pour the candy out on it. When hard I tale the handle of a dinner knife and crack it with that.

That pot that I use is the bottom to an old pressure cooker.
Made your candy again, now I use just 1 & 1/2 tsp of cinnamon oil very tasty and not too hot, just right.

I put mine in strainer after powered sugar and dust most of powdered sugar off.

I like your recipe but I use sugar free sugar and light corn syrup and still turn out great and less sugar taste and I leave out powder sugar
I haven't tried it with a sugar substitute.
