Growing up I had an Aunt and Cousin that use to make these a good bit. Was sort of "Their Project" to do together especially around the holidays. I was so envious of them but fortunately they usually made enough to share when I would visit. Haven't thought about making these in years. Might be a good project for the grandkids one day.
The longer you cook the liquid the faster they work I boil mine for 15 mins , takes 1-2 days! The more water evaporates, faster working time! I hope I explained that right! Enjoy!!

Hi. I remember Rock Candy from my childhood-in about 1955. Since then I did not see it around. Now I am over 70 y.o. and by a chance I was shopping in Chinese grocery and they had Rock Candy. I bought it and found, that the sugar is a lot less sweet then if you just take in the crystal form from grocery. And I am wondering if the change it the sweetness is caused by it's crystaline form or if the Chinese add something to the sugar to make it crystalize better or faster and as a secondary effect the sugar is less sweet.
A restaurant that we would go to growing up would use rock candy as stirrers in their cocktails including their old fashioned cocktails. I am one of 3 kids to our ‘rents. Dad drinks old fashioned cocktails. He would drink 3 of them and give us the kids the rock candy stirrers. Mom would drive us home.

You can use it for something else, but if you want to make more candy, you need to reheat it and add an additional cup of sugar, to make up for the sugar that grew on the previous candy.

Great for my science project I'm cramming that's due in a week... Also amazing how you reply back to everyone in the comments. You are very welcome!! Have fun making it! If you are doing it for a Science experiment, I recommend doing a few variations. You could also put some in complete dark, like in a pantry, and then others put on the window sil in the direct light. And maybe another jar with candy in it in at normal house light. So you can see how light plays a role if any. Maybe try one with a stick and another with a string and see how the crystals grow. Lots of fun things you can do in the name of science with this.

It entirely depends on the container, the ones I show in this video, you can only do one, if you try and do two they will just grow together and be stuck together, there needs to be plenty of room around them.

Try letting the liquid sugar cool down a bit more before putting the stick in it. The crystals still may grow on the stick, the "seed crystals" help it along.

Hi there, no you can't, they will grow together and stick, unless the jar is really wide and the sticks are at least 2 inches apart. You can reused the sugar liquid, however you will need to heat it in again and add an additional cup of sugar to make up for the sugar that grew, because what is leftover isn't very concentrated. If that makes sense?
You are very welcome! So glad your experiment worked! These types of food science projects/recipes don't always turn out correctly the first time, but happy you were successful.
For the ones that stick to the jar and cannot come out... take them and put them into a hot water bath (hot tap water) with the water coming up to about an inch from the top and in about 5 minutes they will slide right out. Yes you will have a huge jar shaped candy but you can chip it down to a smaller size.
Hi Matt, I'm atteping this recipe however, when I put my sugar stick with the seed crystals into the jar with my sugar solution it appears that most if not all of the sugar dissolves/falls off my stick. Wondering if that should happen. I waited until my sugar solution was essentially cold (cooled for over 20 minutes), and still the sugar falls right off. Any advice would be greatly appreciated!!!
Hello! You still may have some sugar crystals on there, that you can see. I would just leave the stick in there and see if crystals start to grow on it, you should see them after a day or two.

Make sure the sugar is completely dry on the stick first. And if the sugar comes off the stick again, just leave the stick in there for a few days and see if sugar crystals still grown on it or not.
I dont get how your melted sugar is still melted after days of waiting while my melted sugar is rock solid after days of waiting, like not just that top layer of it is hard but also the rest of the sugar i poured onto the cup :(
lol yes unfortunately you can't rush the food science. :) With that said some crystals will start to grow within a day or two, but it will take 5 to 7 days to get as big as the ones in the video.
Yep, you need enough sugar solution so it is deep enough for the stick. Yes you can reuse it, but you will have to add an additional cup of sugar when you reheat it, to replace the sugar that grew on the stick. You are welcome!

Let the hot sugar liquid cool down a little more. Just barely dip the stick in water, then roll it in sugar. Then let that sugar on the stick completely dry, before putting it in your warm sugar solution.

And it depends on the jar, everyone I show in this video can only have one candy in it. If you have a wide jar you can probably get too, but it needs to be really wide, otherwise the rock candies will just grow together.
I tried it but the sugar attached to the skewer just dissolved into the sugary syrup, how can I avoid that? It hasn't grow any crystals and it's been more than three days.
You would need to reheat the leftover liquid and add about another cup of sugar to make up for the sugar loss, otherwise it won't be concentrated enough.

Awesome! Glad you liked the video and are going to try it out. I recommend using 1/2 to 1 tsp of flavoring to start. Once the liquid cools down a bit and before you pour it into the mason jar, glass, cup etc. You can take a spoon and taste a bit of it. If it isn't strong enough add another 1/4 tsp or so. That super strength stuff goes a long way.
Wrong. Misinformation. Sugar doesn't cause diabetes. It may be a partial cause, but if it caused it, then anyone who eats sugar would get it. There are so many factors that go into it - genetics, lifestyle, weight, overall diet, etc.

So, with 1 cup of water and 3 cups of sugar, you only get 1 rock candy? Is this correct? Also, do you add any flavoring to the water, sugar and color mixture?
You will only get one large rock candy or about 3 of the smaller ones. You can add hard candy flavoring right at the end at the same time you add the food coloring.
You are welcome!! I am not sure, but I assume a dryer environment works better than one with lots of humidity, but I don't know for sure. It grows great here in Phoenix, AZ which is hot and dry climate.
You can heat it back up and add another cup of sugar and make more rock candy, other than that, not much. Since it has been sitting so long at room temp, I don't recommend drinking it, or using it in drinks. But you are certainly welcome to try that.
I don't have a problem with Ants when I make these. The best way to prevent ants from coming into the house is to make sure the house is clean. The floor swept, etc. Also find here the Ants are entering the home. Seal up the hole and place insect spray there. That should get rid of them.

It can be, but usually just a thin film of sugar that grows on top and it is easy to break it with the fork.

Hello!! No that is correct, rock candy has a milder sweetness than the table sugar it is made from. Because it is made from water diluted sugar. :)

Yes you do, some crystals will grow but they won't look like they do in the video. Sorry but you can't rush the crystal growth, it is what it is.
Can you reuse the liquid? Can you put more than two sticks in the jar?
Hi Jenene, you can but you need to add another cup of sugar to make up for the sugar that is lost as the crystals grow. And it depends on the jar, everyone I show in this video can only have one candy in it. If you have a wide jar you can probably get too, but it needs to be really wide, otherwise the rock candies will just grow together.
Is this the candy that cracks and pops in your mouth? I think we called them moon rocks?

What do you do if the seed sugar on the stick melts off when you stick it into the solution.
Allow the sugar solution to cool a little longer, that should help.
I tried it but the sugar attached to the skewer just dissolved into the sugary syrup, how can I avoid that? It hasn't grow any crystals and it's been more than three days.
Did you heat up your container with hot water first? Did you let the sugar solution cool down before you dipped the sugar skewer in it?
Can you reuse the jar if it has leftover liquid until it runs out? Or only to a certain extent
You would need to reheat the leftover liquid and add about another cup of sugar to make up for the sugar loss, otherwise it won't be concentrated enough.

Awesome! Glad you liked the video and are going to try it out. I recommend using 1/2 to 1 tsp of flavoring to start. Once the liquid cools down a bit and before you pour it into the mason jar, glass, cup etc. You can take a spoon and taste a bit of it. If it isn't strong enough add another 1/4 tsp or so. That super strength stuff goes a long way.

Wrong. Misinformation. Sugar doesn't cause diabetes. It may be a partial cause, but if it caused it, then anyone who eats sugar would get it. There are so many factors that go into it - genetics, lifestyle, weight, overall diet, etc.

There is not exact amount of days. It depends. It isn't an exact food science. Sometimes the crystals start forming on the first day sometimes not.

You can leave it a little longer 5 to 7 days, but there will come a point when they won't get any bigger.

Throw it out, reuse it to make more by heating it up again and adding another cup of sugar.

Hello Susan, you can, but you still need to add an additional cup of sugar to the solution to make up for the sugar that grew on the stick. Otherwise it won't be potent enough.

Also, do you add any flavoring to the water, sugar and color mixture?
You will only get one large rock candy or about 3 of the smaller ones. You can add hard candy flavoring right at the end at the same time you add the food coloring.

You are welcome!! I am not sure, but I assume a dryer environment works better than one with lots of humidity, but I don't know for sure. It grows great here in Phoenix, AZ which is hot and dry climate.
Matt what can u do with the flavor water after you make the candy
You can heat it back up and add another cup of sugar and make more rock candy, other than that, not much. Since it has been sitting so long at room temp, I don't recommend drinking it, or using it in drinks. But you are certainly welcome to try that.

I don't have a problem with Ants when I make these. The best way to prevent ants from coming into the house is to make sure the house is clean. The floor swept, etc. Also find here the Ants are entering the home. Seal up the hole and place insect spray there. That should get rid of them.
