- Well, I've been terrified to tackle Troy's titular traybake for years, and in about 12 minutes you'll see why. But, Community returned yesterday with a table read from the full original cast, and I couldn't think of a better way to celebrate. Srap in folks, this one's gonna get weird.

Was literally going to say this hahaha. She's the GOAT.
I just realized that tomatoe confit is essentially my grandma's pasta sauce. She would blanch the tomatoes first then roast them with garlic, onions and lots of herbs. Once roasted she then then pureed them until smooth and finally canned them. Still my favorite pasta sauce recipe.
He didn't actually make tomato confit, though, he roasted his tomatoes. To confit them, they should be basically submerged in oil and cooked at a low temp for a long time.
It's effectively sous vide but with oil.
@@hartd92 ye i kinda stood in shock that he would use so little oil for a confit, then when i saw the results i was just like "mate you just roasted those", speaking off. pretty sure the skins would have basically all fallen off so you could have taken them after the oven roast which would have made you have dehydrated roasted tomato skins for your dorito powder

Way too many fandoms I knew what would happen when he made the original food and over half the video was left, then he walked on screen and enough food to make a Christmas meal was just sitting there.
This is one of the most aesthetically pleasing dishes you have ever made.
Going totally off the rails is a fitting homage to Community.

Whenever babish makes something absolutely mental he makes one of those tiny tiny gourmet foods that are one or two bites for most people. Not that it’s bad it’s just hilarious because it’s so crazy that the only thing that can be done is make a gourmet version.
This show sometimes feels like Gourmet Makes without the anxiety.

I have a slight problem with the characterization of the tomato cooking. Those are some AWESOME roasted tomatoes... but they are not Confy. To Confy something one completely submerges it either in melted fat or sugar syrup. Babbish juts sprinkled them in some olive oil.
