Our caramel recipe is awesome at our restaurant and really easy. I melt 1lb butter and then stir in 4 cups of sugar. Add 4oz Bourbon. We let that caramelize for a bit then add a quart heavy cream at the end and whisk in in slowly so it doesn't clump up or seize the sugar. If you wanted a salted caramel just add more salt that unusual to taste
I love how Babish has made an entire set of genres here. The regular Cooking with Babish is your basic cooking show, Botched by Babish is a drama, so on and so forth. This has just become the horror genre episodes.

I can conclusively say that as a child I had many a pizza cookie for my birthday as opposed to a traditional cake. I'm not a huge cake fan, but I am a massive pizza cookie fan.

I'm curious about the miso caramel and also afraid. I've tried adding pure msg to chocolate and it turned out awful but it did make me aware of exactly what msg does to food. It brought out a strange meaty essence in the chocolate which was supposed to mix with peanut butter and go into a milkshake but I ended up throwing it away and starting over. So I still haven't had a successful implementation of msg into a dessert despite hearing so much about how it's common. After trying the chocolate the only thing I could think of is maybe adding it to something that has a buttery bready crust.
