- Today I am making soft Mexican sweet bread called conchas. Conchas are a sweet yeast dough bread topped with a buttery sugar cookie topping. This recipe is just like the fresh baked conchas you get at the Mexican bakeries or markets. It goes perfect with your morning coffee.

INGREDIENTS
4 fl oz (118 ml) warm evaporated milk
1/2 tsp sugar (for milk)
2 1/4 tsp (7 g) dry active yeast
4 cups (500 g) all purpose flour ( I used bread flour)
2/3 cup (125 g) sugar
1 tsp (5 g) salt
1/2 tsp lemon zest (optional)
1/4 tsp ground cinnamon (optional)
1/4 tsp ground anise (optional)
3 large eggs (room temperature)
1 Tbsp vanilla extract
8 Tbsp (113 g) unsalted butter (softened)
TOPPING
1 1/4 cup (145 g) confectioner's sugar
1 cup (130 g) all purpose flour
1/4 tsp vanilla extract
8 Tbsp (113 g) unsalted butter
BAKE @ 350ºF / 176 ºC for 18 to 20 minutes

Every morning I look down the street there's a Mexican bakery but they closed because the owners are an older couple. I miss the scent of the pan baking every morning but I'll be waiting and hopefully they be able to come back soon

Just made these today and they are fantastic! The ones from the local bakery are so much more dry. These are moist and flavorful and so delicious. And they end up really HUGE. Thank you!

I remember as a kid I used to eat only the top sugary part. My grandma would get so mad at all the top eaten conchas 😂

This recipe was super easy to follow and I did everything by hand! Came out great! If you are flattening the topping by hand, I recommend doing it on a piece of parchment paper then using the paper to transfer it on top the conchas.

My husband buys these all the time. I’m not a huge fan as I’m white and never grew up eating these but he loves them. I’ll have to surprise him with these. Also I’d love for your to make a dish called “gallina pinta”. My husbands grandmother used to call it pozole but it’s not and they could never figure out what it was she was making until his brother came across gallina pinta. Sent us the recipe and I made it and my husband literally cried because he thought he’d never taste it again. My heart melted. It’s a special occasion for when he’s feeling homesick. But I’d love to see you make it!
Gallo pinto is more of a Central American dish. Does it have white rice and black beans?
Texas Tea no it didn’t have rice or black beans. It was oxtail, short rib, pinto beans, hominy, onion, garlic, chiles, tomatoes, cilantro, and oregano. Top with chili flakes, onion, lime, and cilantro. His grandmother is from Sonora but I couldn’t find anything about it being a Sonoran dish so no idea.

Made these last night. I only tweeked the recipe by doing half butter half shortening. I didn't want the bread to be to much like a brioche. It was a hit! My daughter's favorite pan dulce and she said mine was the best she's ever had! Thank you!

Oh. My. Goodness! Perfection. I love conchas but never even dreamed I could make them myself. That topping(the best part), is perfect, nice and thick. Bakery’s I’ve purchased from always have such a paltry amount of topping-your topping is yumm! Thank you, I will be making this one...as soon as I can find some yeast. So I have made these 4 times since you posted! 😅 my mother is ecstatic with her pan dulce! I don't have lemons, just oranges and have been working out awesome! I also don't have Anise so I have been using cardamom instead , delicious! Thanks again for a delicious rich recipe with real butter! Oh have the time I just sprinkle turbinado sugar on top just to save on butter!😁

Oh Yum!! I remember going into a panaderia in Agua Prieta, Mexico with my parents when I was little. The smell was heavenly - not like American bakeries - this was a different fragrance. I recall long tables in rows, with bakers in white T shirts working at them near the entrance. To one side were the different varieties of pan dulce and you walked along and picked out what you wanted and put it in the bag.
They called the one you baked “Pan de Huevo” - I guess names change regionally.
My all time favorite was shaped just like a cupcake, but it wasn’t cake-like, it was a heavy bread-like texture. I don’t recall what they were called, but they were so good. Thanks for resurrecting some sweet memories!
I think the one you're thinking about is called a mantecada....its a mexican form of pound cake
Great video, many memories of visiting the Mom & Pop bakeries while growing up in South Texas...then you become an adult and move for your career and find yourself where you don't have this opportunity! Don't get me wrong it's beautiful where I live! But you miss these memories from home! Conchas always looked so cool, but so did everything else in the simple glass cases back then! My all time favorite is a Semita (Not Cemita) that was made in Laredo, but with a local twist, I believe. This was a traditional flat semita with some pecans/raisins...but the twist is apparently they added the sweet layer of a concha on top. OMGosh! A fresh Semita like that with a little butter on top...Heaven! Not too sweet, but a little sweet, but still let the wonderful flavor of the anise bread come through! I just about have the recipe researched/figured out...now to experiment! Thanks for bringing such great memories of home alive! My best to the family! :)

Conchas have always been my least fave of Mexican pastries, but I really want to give this recipe a try. My mom always took us to pick up parties at one of the most frequented shops in Houston and never baked these while I was growing up...so I definitely want to learn!
