"CONCHA" has two connotations: noun-seashell and name-short/pet name for Concepcion (conceiving, commonly used in Mexico for girls with Catholic relation to Immaculate Conception). It is obvious this bread was called after the seashell, because of its similarity. Amazing how it has become quite popular abroad. Chocolate ones are my favorite. Excelente receta John !!!

It's interesting to see the original version of what we call "墨西哥包" (literally "Mexican buns") here in Hong Kong. Our buns' topping is looser, piped onto the rolls. Actually our "菠蘿包" (literally "pineapple buns") look more similar to conchas, with a crunchy cookie topping leavened with ammonium bicarbonate in bakeries or baking powder and soda in the home.

I love making conchas! They're amazing to eat after about 10 minutes out of the oven while they're still warm. I live in Southern California and learned how to make them a few years ago. They were my favorite thing to eat for breakfast in elementary school. Only thing I would recommend for your recipe is to use evaporated milk instead of whole milk and add about 1/4 - 1/2 tsp. of cinnamon to the dough for more flavor. For the topping I do use normal sugar and I personally like it more than a commercial concha because it gives it kind of a soft, crispy/crunchy taste. I shared some with friends from the local area and they laughed asking why I had learned to make it before any of them lol. But they really enjoyed them and I was able to share the recipe with them.

Thank you. This is the FIRST time I have ever been able to SUCCESSFULLY make these thanks to your very careful and detailed directions! It helps to have a vintage gas oven for raising the bread dough I think.

You know, I’ve grown up eating too many of these on Sunday mornings (I live in SoCal and shops that sell these are ubiquitous). So glad I have a genuine recipe to try them on my own. Thanks for this (which seems like you’ve had far too much fun marking)

He said what it is in another kitchen tour video. It may have even been on someone else's channel who interviewed him. Just UA-cam search his name and "kitchen" and it should appear in the results.
I believe that it is a La Canche range made in France. If not La Canche, then La Cornue. Both are French brands, which I have been fantasizing about for years. They come in many sizes, configurations and colors. Yes, I built my fantasy range on their websites to see what it would look like and how big of a price tag it would command. His is hunter green in color. I like how the pale blue shades look in a white kitchen.

I haven’t seen these since leaving California w my parents back in 1966 when we moved to Fairbanks Alaska. My dad loved them and the only place we could buy them from were Mexican based stores and bakeries. I sooooo loved the taste of these and have tried to describe them to others over the years and I’d get the goofiest looks from people. I just cannot believe you have the recipe John and your results are a perfect visual duplicate of what we bought in so cal 60 yrs ago! 👀👀
