I love how she describes everything in terms of the dough's emotions. It rises until it's happy, and you stop shaping it before it gets mad at you.
You have to really get to know your dough before it will speak to you.
That’s why I’m a cook not a baker. But I’m still gonna watch and learn what I can.

After watching Claire cooking in the most meticulous mathematically precise way for years, and making brioche specifically, it's fun watching her interact with someone with such a different approach in the most respectful way of their process as a student instead of imposing her ways (which tends to be the way some type A personalities usually are). This was an amazing episode in that sensei!
Mariela has the best personality with her baking! I think her and Claire had some of the best rapport of her guest episodes

Being Mexican and a long time Claire fan, this series has just sent my love for Claire and her team over the moon. I love the deep dive to mexican cuisine in all it´s forms. I love that you can tell that the curiosity towards all chefs and their food comes from a very geninue and wholehearted openness to learn, contribute and share with everyone else. Loving this series!!
We have something called "墨西哥包" (literally "Mexican buns") here in Hong Kong, and it's a local man who brought the recipe back from Mexico after doing business there. They're a bit different from conchas: the topping is looser, piped onto the dough, and we don't do the stamp, either. In fact we have another baked good called "菠蘿包" (literally "pineapple buns") that have a crunchy cookie topping. It's bumpy and gnarly like pineapples, and looks more like conchas than Mexican buns do.
Bolo bread (and Japanese Melonpan) are both very similar in concept to conchas, from what I can tell. I love it when different cultures come to the same, independent conclusion that something is delicious!

It's so amazing that we could feel that Mariela has a personal relationship with every Conchas she makes. Truly wholehearted pastry making.

This is amazing because for years now I’ve been using Claire’s brioche recipe to make conchas and they turn out amazing. Letting the dough rest overnight gives it so much more flavor and makes it easier to work with ❤
Comadre is, more or less, the best bakery in Austin and the best conchas I've had. Menu is different every week, but you honestly can't go wrong with anything they produce.
At first I saw the thumbnail and was like, hm the lady with the fringe looks familiar and then I realized it’s the woman who runs Comadre Panaderia in Austin! I was able to try some of her baked goods, and I really enjoyed the conchas. She seems like an awesome business owner!

I started making conchas about a month ago and find them so much fun to make. The latest ones I made were curry-based. I think it is my new favorite flavor. Glad to see Claire diving into the world of conchas, too! I really love the flavor options that Mariela shared here.
I absolutely love that even though Claire is so skilled and knowledgeable, she is also humble and open enough to know that she can learn a lot from other people. Respect!

Yes! There were a few random LAUSD cafeteria foods that were so good! The kinda shitty chalupas, rectangle pizza in foil tray, cinnamon rolls, coffee cake, those foil cookies!

Delicious!!!! I made my starter with bread flour and the roll with Kamut flour. The Conchas were soft. The King Arthur recipe said makes 10 rolls - they were bigger than I expected. Thank you both again!!

I love conchas! I’d have a go at making these today, but I just made the shortbread from What’s for Dessert this morning! I also have most of a Queen of Sheba cake (a la Julia Child) to get through, so I really can’t justify making more treats today!
These look soooo good oh my gosh 🙈 I need to go to America just for the excellent melting pot of foods. Mexican food in particular looks like something I would gobble up. There are a few tex mex type places here in the uk but I doubt it’s as good as the authentic thing.

I’m mexican and I love conchas!!!
I'm thinking of making these and using a filling in the bread. Something like a honey nut , a fruit or even a custard. It looks so yummy and the thought of biting into a delicious filling makes my eyes roll back into my head with ecstasy.... Man it made me hungry for something sweetish. So I'm snacking on some chocolate chips (it's late and I just didn't want anything too intense to make or to filling to eat now near bedtime and I'm out of ice cream 😢)
