- Today I am cooking at home and making pan bolillos. This is an easy way to make French bread rolls at home. The crusty exterior and the tender soft middle are perfect for sandwiches or just slathered in butter.

STARTER
1/2 cup (65g) all-purpose flour
1/3 cup (78 ml ) warm water
1/4 tsp dry active yeast
INGREDIENTS
3 1/2 cups (455 g) all-purpose flour
2 tsp dry active yeast
1 Tbsp (14 g) sugar
2 tsp (10 g) salt
1 Tbsp (15 ml) cooking oil
1 1/4 cup (295 ml) warm water
Preheat oven @450 ºF / 232 ºC and bake for 10 minutes, then lower oven temperature to 400 ºF / 204 ºC and continue baking for 10 to 12 minutes

I used to deliver this style bread all over ElPaso in the early '70's. They're so delicious ... It was understood you must bake them in clay ovens to achieve the crust, properly. Now, if you found a way to produce a truly hard crust with a regular oven; you'll be my heroine for sure 😇

The reusable bee wrap is so cute where did you get it? The bread look awesome. I always shied away from making baguettes because the dough looks like a pain to work with and the special pan too but this recipe looks very easy and doable!

All I have is fast acting yeast can I use that for the starter?
I made your original recipe for these Bolillos and they were delicious. Since I didn't need 8 rolls, I used half the dough for a pizza crust...so yummy and crusty yet chewy, just like this roll you opened up. I can't wait to try making them again--with the starter this time. Thanks for sharing your recipe!

One night, decades ago, on a chill rainy night, in a small den in Shanghai, a Turkish woman made this for me using a recipe her Ethiopian mother gave her. The recipe was made in New York and has an American nature to it. We call it Chinese-Trurkish,Ethopian/America, Mexcian Style French Bread. It has pockets!
I didn't know of the technique of a pan of water in the oven and spraying water. Thank you for teaching me something new!

Hi I was wondering could I use instant yeast for the starter?
You proof your dough THEN knead it?? It's always been knead THE N proof, so what is the purpose of reversing it, is the texture different or what??
Resting the dough makes it easier to knead. You can skip that step if you're using a mixer.

How long is the ‘starter’ good for? I was going to make this bread today, so I made the ‘starter’ last night. I checked on it at 1:00 a.m. and it’d doubled in size. At 7:00 a.m. its dropped down to its original size. Is it still good or did I wait too long? Thank you (anyone).
I REALLY adore your channel. I am wondering if you can use bread flour? Or is it better just to use the all purpose flour?
Nicely done! There are several bread recipes I make that begin with an overnight starter aka Poolish. I mix it up in the bowl I am going to use to mix the dough.
That sticky dough can be a bit tricky but it is what gives you that light airy interior, you have to be careful to not add too much additional flour or the rolls will be dense.
Another thing I do when misting the rolls in the oven is to cover the glass oven door with a thick towel. If you accidently spill water on the hot glass it can shatter. (Don't ask me how I know this.) 😩
For anyone asking, yes you can use a stand mixer, no higher than speed 2 with a dough hook.

Real Mexican use our hands. Gives it extra flavor. If you want to use your feet even better ( jk ) I have toenail fungus.
