Traditional Mexican Bolillo Bread Recipe

  • Today we are making homemade bolillos. They are very similar to French bread, they are used to prepare tortas or for everyday meals.
    Ingredients:
    3 Cups All-Purpose Flour
    Extra flour for dusting
    1 Packet Active Dry Yeast (2 1/4 Tsp)
    1 1/4 Cups Warm Milk
    2 Tbsp Sugar
    1 Tsp Salt
    4 Tbsp Butter (or 1/4 Cup Melted Shortening or Lard)
    Bake at 425 degrees for 12-15 minutes or until golden brown.

    I have made this recipe a million times! It’s a must. I use it for molletes, tortas, or just by themselves they are amazing !

    This deserves WAYYYYY more likes. Like others have mentioned the porous crumb on other tutorials are too dry and springy; the crumb on your bolillos is perfect and you can see the gluten threads 🔥🔥🔥

    I used to get bolillo rolls all the time back in Tucson! I miss them a great deal and only just thought to look up a recipe. This looks like somethin' I can do where I am right now and it makes me super excited! Thank you for posting this!

    How come when I buy bolillos in the USA, they are soft and fluffy. Mexican bolillos are hard and crispy on the outside and have a thick dough inside.

      Depends where you buy them. Not every Mexican panadería in the US makes them the same way. There are some Mexican panaderías that know how to make them better than others. It’s just a matter of finding that spot where they make them to your liking.

    Kneed
    Make into 3 inch balls
    Roll and shape into Bolio shape
    Place on cookie sheet (put a little oil)
    Place kitchen towel and let rest for 30 minutes
    425 degrees
    Make slit on the top
    Spray them with warm water
    Place baking dish with water under them
    Bake for 20-25 minutes

      The only thing I can think of is the yeast. When doing the first step, did it activate?

      You use warm water or warm milk put in yeast

    Fantastic !!! Honestly not too difficult to make . Followed to a T and they came out great . The only tip , if you make smaller bolillos they will cook faster so watch em !

    My wife is from El Paso so it’s hard to find a place with good bolillos. Funny thing is that I’m from Corpus Christi and Austin and I never knew eating menudo with bolillos was a thing , we always used corn tortillas.

    After waiting for the yeast to activate it wasn’t that watery like yours and when i added it with the butter the dough just came out flakey and not wet or sticky at all, what could i have done wrong?

    Delicious. Use lard, it makes for the best texture and flavor, and its healthier than you have been lead to believe.

      My grandma in Mexico cooked everything in lard. She was healthy. I eat "healthy" in today's standards and I'm not nearly in good shape as her. Something tells me today's healthy is not really as healthy as back in the day. Probably preservatives and plastic packaging and I drive everywhere whereas she walked everywhere lol

    Made these today, had to fix the dough by adding more yeast because after 2 hours it still wouldn’t rise. But other then that fairly easy to make and tasting good

      That means your yeast is weak or dying/expired you should get new yeast

      Yes, you can make them as small or as big as you like. I like to make them in various sizes for the kids.

    Now.... I'm actually not a fan of my bolillo with a hard crust where i used to get my bolillo at food city they made my favorite bolillos that were sooo soft i loved it till they like change the recipe a little bit. Pero they kinda made it the same way again but now with COVID the beast and now we are scared to get them because in my neck of the woods people just grab it. But if i just bake em in the oven with out the water would it be less crunchy possibly?

    What is champurrado? Google wouldn't translate it.

      Champuraddo is similar to hot chocolate except it's thick and creamy. Prepared with h Mexican chocolate, corn flour , milk, water, and a few spices.

    So my oven is a little messed up and it doesn’t get and higher than 350 degrees F, will this be okay? And does the bake time have to be increased?

      You should be fine, the baking time will be a bit longer just keep a close eye on them and remove them once they have a golden color
