We have this kind of pancake in Morocco it's Called "Melwi" which is the rounded one , and "Msemmen" is the squared one, but in this you used just Flour, ours us Morrocans we use Flour + fine semolina which gives it a golden color + the taste which is very good.
it's called parotta in India and popular all over south, south east asia & the carribean, you're supposed to slap it down real hard to separate the layers and get that beautiful texture, it tastes amazing with curry or bhaji 😋😋

Roti Canai involved tossing the dough in the air to achieve paper thin consistency & it’s not easy to do for an amateur homecook like me. But, I’ve found that your technique is much easy for me to replicate in my humble kicthen. In fact, I might gonna try it tomorrow 😉
