These Italian almond cookies (a.k.a. soft amaretti or amaretti morbidi) appear in my kitchen very often because they’re quick and easy to make, they taste delicious (especially if you love the almond flavor) and they require 3 basic ingredients (egg whites, almond flour, sugar), plus some aromatics and a pinch of salt.
In Italian, the word amaretti is derived from the word amaro, which means bitter. And so in order to get the true authentic taste of an amaretti, you must use ground bitter almonds or replace them with bitter almond extract. Luckily, most almond extracts have already bitter almond extract as their base because that’s what gives them their intense scent.

TIP: Use room temperature egg whites because they will whip up much faster.

What's the best way to store these? How long do you suggest they are fresh for if stored properly?

At room temperature in an airtight container. In my home they usually last for 6-7 days without drying out.

Can you make the espresso ones using almond flour instead of hazelnut flour? And do you think I could add some Dutch process cocoa to make them chocolate/espresso? If yes, then how much cocoa powder should I use, and how much flour would you have to remove to keep the proper ratio? Also, if it is not too much trouble, would you be able to provide the gram weight for the flour and the sugar as opposed to cups? I vastly prefer weighing my ingredients!

Also, you can definitely make almond-espresso amaretti. If I wanted to add cocoa (I haven't done it yet) I would add 2 tablespoons cocoa powder and I would remove 2 tablespoons almond flour. This is a forgiving cookie dough so I think you won't have any problems. Good luck!

I really can't say about the almonds because homemade grated almonds can differ significantly from the store bought :)

Hi, no these cookies are not normally used for tiramisu. Tiramisu is usually made with savoiyardi biscuits (ladyfingers)
I always find that the underside gets to hard/burnt because of the baking plate! Any suggestions to make them light all around? Thank you!
Maybe a bit lower oven temperature and aluminum foil under the parchment paper. That could work
