Can you do a “basics with Babish: cleanliness” I always wonder how chefs keep their surfaces clean when preparing multiple dishes? I usually just use a bunch of Clorox wipes and wash my hands at least 100 times but I’m curious as how a pro does it?

Cake batter gag aside, it's super easy to pasteurize your own eggs using a sous-vide stick!
Simply put the eggs in a vat of water with your sous-vide stick and set to 135 Fahrenheit (57c) for 75 minutes. That's it. The eggs will still have the texture and consistency of raw eggs, but will be food safe and no risk of salmonella, and will last for a long time in the fridge.
