you can also use cream only (where some people use milk), and whip the cream by itself and then fold the other ingredients in. By making it into whipped cream you aerate the liquid so that the water is suspended in the cream, this foregoes the need to churn the ice cream at all. Churning in a machine, or in a bag with ice, is necessary to break ice crystals before they can form while the water in the cream is freezing. However once the cream is stiffly whipped, water will not form solid crystals, you can literally put it in a margarine container and throw it inthe freezer, come back in a couple hours and it is super smooth and creamy. This is the only way I make ice cream in face, 2 cups of cream, 1 can of sweetened condensed milk, and then add whatever flavor I want (vanilla, melted chocolate, espresso powder) to the condensed milk and fold it into the whipped cream, makes enough to fill a standard American margarine container, no churning needed, and also it never freezes super hard like ice cream with higher water contents, because it's only cream with higher fat solids, it will stay nice and creamy every time you take it out of the freezer. I've also done the same exact thing using aquafaba (garbanzo bean water) as the cream but still following the same recipe. And if you make it strong flavor like chocolate, you literally can't tell the difference between that and actual cream.
