- We challenged chefs of three different skill levels - amateur Scotty, home cook Anthony, and professional chef Frank Proto - to make us their best ice cream sandwich. Once each level of ice cream artist had presented and tasted their creation, expert food scientist Rose popped in to explain the choices each made along the way to add some context to the results. We know there are really no wrong answers here but - which one looks best?

I’d love to see the level 1 chefs do a cook off against each other with the same dish, almost like a “4 levels”. Same applies with level 2 and 3, please make it happen.

I always love, when the level 1s just use a store bought product for one of the aspects, so that you have the level 2 and 3 going through an entire big process with many ingredients and wait times and you have that interspersed with shots of the level 1 just unpacking the thing they bought. Flawless comedy.
glad you brought scotty in, all the other level 1s were getting too good lol -- store bought ice cream and cookie dough is exactly what I expect from a level 1 lol

In reality most level 1 will just go and buy premade ice cream sandwich(no klondike bar though).

Ok I gotta admit, as much as I love all the level 1 chefs it's nice to see one who seems to legitimately be a novice. Like at this point Emily's technically level 2, she's just in level 1 because she's slapping things together like she would on tuesday afternoon. Her own show proves she likes cooking and is pretty good when she wants to be. Scotty seems like he would only bother with all this if he's trying to impress someone or taking something to a family gathering, which I appreciate since most of us also just buy these from a store.

@@cosmin1574 It's a personality almost all passionate chefs share. It's like yeah, we can be simple when we are just feeling lazy, but sometimes if we got the time and energy, well, it's very easy to just go nuts with our food. Like last night I was almost just gonna eat some spam with rice and call it a night, but then I got a surge of energy and ended up making spam fried rice topped with fried garlic chips and a fried egg, and a quick homemade chili oil.
Anthony killed it this episode. Those look phenomenal.
Chef frank is an expert to say peanuts, banana and fudge goes well together.
Everything goes together as long as you like them together.
why would they not go together? bananas and peanuts (peanutbutter) is a thing, bananas and chocolate is a thing, and peanuts and chocolate is a thing. they’re all things so why can’t they go together?
Frank nailed the biscuit, but Anthony's toppings & ice cream were on point. So many ideas now tumbling around the old brain pan. A million thanks for the ideas and have a champion day.

That would take up to 3 to 12 years for vanilla orchids to produce vanilla seed pods

You can brown the butter of any cookie recipe that calls for melted butter.
Honestly, Scotty’s sandwiches looked the most delicious. Can’t go wrong with chocolate chip cookies and cream.

Yeah. Fully arranged, Scotty's is the only one I'd actually eat, since I'm allergic to peanuts, and hate pistachios. Frank's would be awesome without peanuts in the praline, though!

Hear me out, I'm a big fan of a half baked cookie for my ice cream sandwiches. That way it's easier to bite through. Back when I did culinary in school, I made a pistachio cookie and a lavender ice-cream.
Wow, what a great episode. I have been waiting for more ice cream episodes. All three chef's were great, but I wish there was more time with Dr. Rosemary Trout. She was fantastic and very interesting. Excellent work Epicurious!

@@JessicaSmith-fw3yp I said doable, not easy. There's a phrase in economics called opportunity cost. It's definitely cheaper to buy one than the time it takes to make all that.
From a technique perspective, nothing Frank did was that difficult in my opinion. For full disclosure, I have the benefit of having gone to culinary school. I didn't quite finish save a couple of classes, but I have a pretty firm grasp when watching someone of Frank's level doing something. He's absolutely done some things that I know I'd have a difficult time with, but this one is of moderate difficulty.
This one seems like it's complex, but it comes down more to planning and prep than anything else. If I had the same equipment and time, I could put out the same thing he did here.
Would I want to? Maybe for a special occasion.
