Today we are making Vegan Taquitos using an airfryer. A taquito, or rolled taco, is a Mexican dish made up of a rolled-up tortilla with a stuffing and is often deep-fried. We are preparing these amazing Vegan Taquitos recipe with a stuffing of black beans and mushrooms and serve them with guacamole and salsa .These Vegan Taquitos are such an amazing easy snacks and perfect for movie or game nights, parties and get-togethers
These Vegan Taquitos are high in protein because of the black beans stuffing and healthy since we are using minimum amount of oil, you can even omit the oil in it's entirety, since we are using air fryer to cook them.

Ingredients for Vegan Taquitos in Air Fryer
Corn Tortillas - 6
Mushrooms - 200 grams
Oil - 1 tablespoons
Salt - 1 Teaspoon
Black Pepper - Half Teaspoon
Boiled Black Beans - 500 Grams
Onion - Half small
Cilantro as needed
Vegan Cheese - 40 grams
Salt - 1 and half teaspoon
Black Pepper - 1 teaspoon
Garlic Powder - Half teaspoon
Oregano - Half teaspoon
Juice of half a lime
Filling the Taquitos
Tortilla
Black bean stuffing - 4 teaspoons
Lime juice
Grated Vegan cheese as needed
Brush oil on top of the taquitos

Can’t wait to try these!! …..What would the directions be using a regular oven?
Glad you liked the recipe, you can make them in the oven over 180 C for 6-7 mins on each side(front and back)- it will take a little longer than the airfryer, also make sure to preheat the oven first.

@@Foodotomic My only corn tortillas were ‘street taco’ size. I used vegan cheese sauce I’d just made. Between the beans, mushrooms and cheese sauce it turned out surprisingly good!

The stuffing does freeze well, but not the tortillas

What kind of corn tortilla is that?? What’s the brand? Those look more like flour.because it’s thicker and bigger than corn tortillas
@@stephaniegonzalez3575 Not sure about the Brand Stephanie as I prepared them a while back, but they are definitely corn tortillas. I was pleasantly surprised myself when I found them in the supermarket as they were larger compared to the other ones. I will find out the brand when I go next time to buy them.
