Hi folks! Tonight I made macaroni cheese for the tea :) Definitely one of our favourites! I always bake my macaroni to get the top nice and crunchy, but you could always just pop it under the grill for a few minutes if you don’t like it quite so baked :)
Sometimes I add cooked bacon to the sauce…which is extra delicious :) Perfect served with garlic bread or a wee bit of side salad…or even a few chips (french fries).

Serves 3-4
300g (3 cups) Dried pasta - I used macaroni
For the sauce-
Butter - 43g (3 tablespoons or 1.5 oz)
Plain flour - 43g (3 tablespoons or 1.5 oz)
Whole milk -500ml (2.1 cups)
Double or heavy cream - 120ml (0.5 cup)
Grated cheese 130g (1 cup) - I used strong Cheddar
Mustard - 1 heaped teaspoon
1/2 Teaspoon of nutmeg
For the top-
I usually use a combination of Panko breadcrumbs, grated parmesan, grated mozzarella and grated cheddar - The amount is up to you :)

Hey from Ohio USA. I have a couple of ways that I make macaroni and cheese, but my fall back recipe is my mothers mac and cheese. It's supper simple. just cook your macaroni, drain then add butter. Then I mix up milk, grated colby cheese, ( a cheese I grew up eating and we always had in the house) Grated Cheddar cheese, one or two eggs depending on how much mac and cheese that I am making, salt and pepper to taste. Mix all ingredients and pour into you baking dish. I also like to add a bit more cheese on top and barely mix it in. Bake for 45 min to 1 hour on 350 degrees or until nice and bubbly and cooked through. It has more of a custard type texture and I love it! Sometimes the best food is the food you grew up eating.

We add ham or bacon and spring onion to Mac and cheese. My son who is the best cook in the family also adds capsicum and garlic.
I make macaroni and trees! It’s macaroni and cheese with broccoli.
instead of just throwing the flour into the molten butter i always start of by sautee-ing a finely chopped onion and a clove of garlic and finely diced bacon bits. then i add the flour, making the roux and adding milk and the cheese
I also add a good splash of double cream to make it even richer. I do this of course in honour of Jennifer Paterson and Clarissa Dickson-Wright.
What i also often do is to making tiny meatballs in a separate pan. I mix half beef/half pork mince with sauteed onions, breadcrumbs, and seasoning and an egg yolk. i roll them into wee meatballs and fry them until golden brown. Then i add them to the oven dish and pour the macaroni-cheese mixture on top. I do this because Im highly allergic to vegetarian and vegan food.
Onions don't belong.

Sometimes I use applewood or Mexicana cheese or add some cream cheese with the cheddar and Shwartz spicy italian seasoning to it
Last night my mum and I watched your first and second videos ever, the shepherds pie one and the other mac and cheese one, then this appears. Love your recipes and your videos. My mum is Scottish.

I added parsley with the mustard to the sauce & avoided salt in the pasta as the husband has medical issues.
The temps, 400C isn't 200F. I guess 180 C will do the job, as that is what my small oven defaults to.
OK, we ate it. It was yummy. I sprinkled on top with cheese & Chinese 5 spice & melted that.
I made my homemade mac n cheese with some canned chicken in it. I also will add cut up hotdogs instead of the chicken.

I'll usually cook up some bangers and mushrooms and then throw in some spinich at the end. Make it a whole meal.
Same as you but with the breadcrumbs, double cream, mustard and usually 3-4 cheeses but I’ll definitely make this
Lately, I have been making it by the one pot method (cook 1 pound macaroni in 2 cups milk and 2 cups water, add cheese when most of the liquid is absorbed) but I also make it carbonara style, roux style like this one, and even just stirred in butter, cheese and cream into cooked pasta and bake it off. It is all yummy!

I basically do it like you, but I like Coleman's mustard instead of Dijon. I also stir in two beaten eggs add a big spoon of sour cream before pouring into my baking dish.
OMG. This looks absolutely amazing and I will be trying your recipe out. In my homemade mac cheese I add in with the flour (depending on how many people I am feeding) a half tablespoon/one tablespoon of Colmans Mustard powder. It’s a stronger mustard flavour for me and adds a bit of tang. I really think it’s all dependent on what your family and you likes. Your mac & cheese looks beautiful and I don’t think there is anyone here who would turn it down. Thank you for filming and posting this. You are wonderful x

I always use English mustard in any cooked cheese dish - brings out the flavour and also add crispy nibbles of smoky bacon. Try topping off with cheese as usual but mixed with crushed ready salted crisps and crispy fried onion. Serve with fresh tomatoes and green salad!😎
We love to add flaked drained high quality tuna and frozen peas. Big hit in our family

I've always liked Macaroni Cheese, I just worry about the calories! I bake it in the oven when there's time but sometimes just have it straight out the pan onto some toast with a wee bit smoked salmon.
I made this yesterday. Got thumbs up from my 10 year old and I. I found it to be very similar to the M&S ready meal mac cheese

I like to use both Colby Jack and Velveeta in my cheese sauce...and I also use evaporated milk...and we love having mac-and-cheese with either BBQ pork chops or meatloaf...
I love pasta dishes but have never tried macaroni cheese yet. I have seen other recipes where you also add cauliflower, which sounds delicious!
That would be Cauliflower cheese.

Are the Fahrenheit/Celsius temperatures reversed? I don't think I'd be cooking this at 200 degrees Fahrenheit. It would never brown. Love your recipe although I've always used Coleman's dry mustard in mine. For some reason, I like its flavor better than any of the prepared mustards. Love your channel, too.

It does look delicious but every time I try it I don’t really like it. I guess my lactose intolerance makes me feel sick from it. But I do love potato gratin which is basically similar! Such a weird person I am!!! Thanks for the recipe. I want to try it. I will add laurel, nut med from whole, smoked paprika and possibly white pepper.

I was raised on making macaroni and cheese with Velveeta, butter, and a slash of milk with salt and pepper to taste. Never heard of baking it or using real cheese till I joined the Navy and my shop was once arguing over who had the best recipe. Needles to say mine didn’t win the argument. I’m going to use this recipe next time I make it though
I add five big shakes of Crystal hot pepper sauce and some small cubes of ham.
Hi Cheryl from Spain, that is pretty much how I make mine.
Looks great!! I use dry mustard powder instead of prepared. And I tear up 4-5 pieces of bread, toss with some melted butter, and use that as a topping instead of panko. Gives a lovely crunch and texture next to the creamy smooth sauce!

I've never thought of adding boiled water to pasta, I usually boil a pot of water and add the pasta. Also I've seen chefs cook the rue ( flour and butter) till it gets a wee bit of colour ( blonde) for extra flavour. Love your channel ❤️

I know here in America restaurants serve mac and cheese with pieces of lobster but I actually think the smoked haddock you use sometimes would be outstanding mixed in!!

@@Craig_whyte It's really common to have fish with cheese sauce in many parts of the UK, and it tastes good. I have no idea why people think it would taste bad.
@@robokill387 I love fish pie, using smoked haddock and plain haddock, in a cheese sauce, so neither do I understand why people are turning their noses up at smoked haddock in it!

I can’t add cheese if the heat is still on as my sauce splits. Lovely recipe irs how I make mine. I do boil my pasta in chicken stock cube 😊

Coleman's mustard is the mustard i use, its my "secret ingredient ". Lol
Depending on how fancy im making the mac n cheese. But i add what ever cheese in the fridge, but adding just a tiny bit of a smoked cheese is an incredible addition.
My secret ingredient is the nutmeg and cinnamon
Now you're making me think of a dash of smoked paprika might be good....I've not made or had mac n cheese for years....

You have really ramped up this recipe with those cheeses and Dijon mustard looks amazing I’m sitting in bed feeling hungry now while I’m watching - I do use a whisk but only because I’ve never thought to just use the spoon - I’ve never managed to not make too much pasta but it all gets eaten - I sometimes just skip the oven part of we are hungry - I’m going to make this with the Panko breadcrumbs looks amazing x
I’ve been waiting for this one. I made Mac and cheese last night with broccoli. Got a recipe from Pinterest. Pretty much identical to yours. Your suggestion to make more cheese sauce is a great idea. Mine was kind of dry even though it didn’t go in the oven. Adding by nutmeg or paprika would be better Ty, mine is quite bland.
Try a pinch of cayenne for a pick up. Start with a very small pinch. You can add more but you cant take it out. Sliced tomato on top goes well with macaroni cheese
I like to add some boiled cauliflour, broccoli and ham
yum looks lovely but i like ta add some philly to my sause as well as bacon lardons into the mix and some musrooms and for the top some sliced toms

It looks so delicious. How I make macaroni cheese is a bit similar to how you make it. I love cheese so I would probably add several different kinds of cheese to the sauce. I also add whatever I feel like sweet corn, peas, tuna, hot dogs ... anything available and I feel like adding if I'm in a hurry I just do it the basic way nothing extra. Thank you for the recipes I discovered this channel recently and I got hooked.

Hi from Aberdeenshire I just recently found your channel and love it 😍 I make my Mac & Cheese pretty much the same as you minus the nutmeg , has to be Marshall’s Macaroni though and use English mustard .
My recipe is almost exactly like yours except for I use dry mustard and add a little bit of hot sauce which brings out the cheesy flavor.

Hi Cheryl, that looks delicious, my mouth is watering! One cheese which I saw on The Barefoot Contessa, is gruyere cheese, it’s a game changer! I do add other cheeses, a very small amount of blue and some Parmesan but, the majority of the cheese I use is mature cheddar, anyone who has eaten it (even those who don’t like blue cheese) love it!
I don’t make a roux, I just put the cold milk, butter, and flour into a pan and whisk till thickened. No lumps guaranteed if you don’t like making a white sauce the traditional way. I use a teaspoon of English mustard as it lifts the flavour of the cheddar cheese.
I've tried this as well but i find it will result in a raw flour tasting ever so slightly grainy sauce.
Making a roux and white sauce the traditional way is the simplest thing ever and it results in a very smooth velvety texture.
That looks amazing, the recipe does seem to be extremely rich and creamy, and I love food like that. I think I must have been French in a former life , ha ha, Oh and that brand of Dijon mustard you used makes every thing taste next level. You should try it on a toasted ham and cheese, either a sandwich or croissant. Any way thanks so much for sharing. I am going to try this recipe, may be tonight. Cheers from Australia.

Great recipe, only two of us at home now and my hubby HATES macaroni cheese, so I very rarely make it, I've tried making it and freezing it but its never the same. As this looks nice n creamy I'll give this one a go in the freezer (after I've had my fill lol). Thanks Cheryl xxx
