Ingredients:
1/2 cup liquid egg whites (or whites from approximately 4 large eggs)
1/4 cup water
2 to 3 tablespoons egg white powder (adjust to preferred density)
1/2 cup rind flour
Instructions:
Prepare the Egg Whites:
In a mixing bowl, combine 1/2 cup liquid egg whites (or whites from about 4 large eggs).
Add 1/4 cup water.
Mix in 2 to 3 tablespoons of egg white powder, adjusting based on the desired density. Mix until you achieve very stiff peaks. Set aside.
Make the rind flour:
Refer to a video for specific instructions on making “rind flour”. This step involves a particular method and is not the consistency of pork Panko.
Combine and Mix:
Once the rind flour is prepared, add it to the egg whites in the bowl.
Add Flour:
Mix until you achieve a consistency similar to pancake batter. The exact time needed for mixing will vary depending on the method used (grill, electric tortilla press, or frying pan).

These tortillas look so good and I'm trying to figure out how to make something that will get crunchy. I really like the Hi Lo Life torilla chips but they're just too expensive.

Thanks for the recipe! I've learned a trick with whipping egg whites. If the egg whites are room temperature and the water is warm/near hot, the egg whites will whip up faster/easier.

@@cheffatgrams I wonder if this technique would work with egg white wraps using gelatin, too. 🤔 They're such a pain to try to get an even level in the skillet.
@ronip3655 My tortillas are incredibly easy to make; I haven't tried any other kinds. To test if a tortilla is good, I just throw some cheese and picante sauce on it, roll it up, and if it tastes good, it's a winner.😋

That's cool. I wonder if ground chicken + yolks can replace egg whites in some way. My body rejects raw egg whites so I am concerned about even cooked types. I loved chicken crust pizza.

I buy the Kirkland carton egg whites and they say on the carton that it will not whip. Is there a difference between it and the Great Value brand that you're using?
Yes I use the great value cage free, but their regular ones work just as well. I’m glad you said that about the Kirtland I almost bought some of those. I love their cheese.
Oddly my local Walmart has been out of Great Value Pork rinds. So, do you think the Macs brand or the barrel of pork rinds sold at Sam's club can be substituted? Thank you
Mac and Baconettes work good also almost any store brands, HEB had really good dry ones too.

You never know maybe they have psoriasis or very sensitive skin and it's safer for them to use gloves.
@margaretweber3931 I don't typically talk about this, but I have chronic idiopathic urticaria, an autoimmune condition causing unexplained hives. I'm a bit of a germaphobe too 😂🤣, but you can see irritation on my left arm in the video due to this condition.
