    Today we test out a low carb hushpuppy idea inspired by the viral Tik Tok video that swept the keto world: Parmesan Balls. Did we come up with a viable option? Let's find out.

    Keto Pork Rind Tortillas
    Servings: 12 six inch tortillas
    Time: 20 minutes
    Difficulty: easy
    Ingredients
    4 oz. Hot & Spicy Pork Rinds (regular work just fine, too)
    1 (eight oz.) package cream cheese, softened
    8 eggs
    1/3 cup water
    1 tablespoon granulated garlic
    1 tablespoon ground cumin
    Method:
    1. Place pork rinds into a food processor and blitz for about 10 seconds, until they are dust.
    2. Add all other ingredients to food processor and blitz for about 45 more seconds. Until you have a nice smooth batter.
    3. Preheat an electric griddle to high. (Using a non-stick pan on the stove top would work also, I would just set the heat to medium-high)
    3. Spray cooking surface with a little spray oil (I use either coconut oil or olive oil spray) and pour 1/3 cup of batter onto griddle.
    4. Gently spread the batter as thin as you can with a rubber spatula and cook for about 2 minutes or until golden brown.
    5. Flip tortilla and continue to cook for about 45 more seconds.
    6. Repeat with the rest of the batter.
    *These tortillas can be made ahead and wrapped in plastic, or stored in the freezer!

      Cellulose is wood pulp. I know for a fact I worked in the plant that made it. It was manufactured with nasty chemicals. Take your pick.

    I made a short and it did well on Facebook, fizzled on the other platforms, I added minced onion. My great grandma used to make me homemade hush puppies! They were so good! I miss those like crazy!

    These hushpuppies look so good. I'm going to add a couple tablespoons of pork rind crumbs/flour to get more of a bread like texture. Yum!

    It's so interesting... Aussie here, for a few years what I thought Americans were talking about when saying hush puppies (aside from the shoes) is what our KFC is calling 'popcorn chicken' and I was scratching my head watching the keto twins make hush puppies and not putting in any chicken... super cute story behind the legend of the name... reminds me of Waylan Jennings in the first season of Dukes if Hazard.

    I think I would add a tablespoon or two of almond flour to the real Parmesan recipe cause I don’t care for pork rinds but it might make them breadier like a real hush puppy. Looks good!!

      I just tried air fryer liners for the first time, and I love them. I got a crispy fried texture, which was surprising to me. I had always expected the food to be soggy.

    These fried beautifully, but to me they tasted like hot parmesan cheese. They were good if you are big into parmesan. However, the crispy crust on the outside was outstanding. I found myself digging the filling out and eating the crispy shell. Now I think I need to try frying something with parmesan and egg whites as the breading.

    The Keto twins made this recipe a few months ago & today 4/19, they came out with a 2nd video trying some of their followers suggestions. They added 1 tsp of cornbread flavoring (and thought it was too much), they also added bacon bits & diced pickled jalapenos. They also preferred the outcome of the "green can stuff" to the fresh parm...

    Those look tasty! I have started using liners for my air fryer, saves on clean-up for sure. Spraying your food with a little avocado oil helps too.

    I wonder if doing a 50/50 blend of Victoria's keto flour and parm cheese with the egg whites would give you a less salty less cheesy but wholly satisfying hush puppy. Worth a shot? Or maybe a 1/3 each of parm, VKF & straight coarse almond flour (like Aldi's) would give a more cornmeal like texture (with egg white as the binder).

    I know it sounds weird, but I once made a keto cornbread by using a blended can of baby corn since baby corn is mostly "cob" lol, therefore low in carbs.
    Maybe something like that can be done here? Some blended baby corn? 😂 🌽

    I've made these and they're so good! They're good plain, even dipped in a little marinara is good too, but played around with it and made another batch. I added some corn extract, and a little minced onion and garlic powder. Pretty good!

    They sound really good. I would try equal parts of both cheeses in the recipe. Also, maybe incase a chunk of mozzarella cheese in these. Yummy.

    This is the second video for this recipe that I saw today! Both resulted with the canned cheese yielding a better ball! Cannot wait to get to these with some cornbread extract... because honey, you can take the gal outta the south ... ( even if she didn't start out there) but you can never take the south outta the gal! Gotta have me some low carb fauxsh puppies ! ( and if they don't taste enough like puppies... well then I guess we'll just eat some cheeze balls!

    These look so good. I’ve been wanting hush puppies and corn bread so bad. I actually ordered that cornbread flavoring last week to make chaffles with it to see if they taste like cornbread. When it arrives I’ll definitely make this. I bet it would be good if you finely mince some onion and add to it. Thank you for this video.

    I watched this video, and decided to change it a bit. I used half Parm(canned), and half almond flour. Also used a tsp of baking powder. They turned out great! More bread like. Anyway, just putting this out there. 😊

    Wes - take your hero bread ends, dry them, pulverize them, then add them to your cheese / egg mix - that will get them to be more bread-like.

    These sounded so interesting that I made a 1/2 batch of the original recipe with a bit of garlic powder added while watching the video. (That’s all the Parmesan I had that was already grated 🥴)
    I have had hush puppies before, years ago, and can’t say that the texture was right. However, as I finish writing this, I am also finishing (eating, that is) off the Parmesan pearls. Absolutely love them! Thanks so much for this recipe. So easy, even frying in oil though I do plan on trying it with the air fryer.
    I did use Parmesan that had potato starch as an anti caking agent, so there was no problem of the egg white not being absorbed. I usually use 100% cheese in recipes so I will be experimenting with additional acceptable ingredients to take up the egg whites.
    Thanks again for a recipe I would have missed as I don’t pay attention to TikTok nor Instagram.

    I made the second method with the Kraft version, and did 2 tablespoons first then added the third and cooked the Pearl's in my air fryer, to borrow another UA-camr "Delicious!" I too will add these to my favorite recipes

    I saw this video the day it came out and was sooo impressed. I got the supplies and I just made them. OMG they are good. I used italian seasoning with the onion and garlic powders. Didn't have any corn bread flavoring. OMG, OMG, and OMG. I have never had hush puppies so no idea what they taste like. Again OMG, these are good. Thank you, I don't tic toc or instagram, you tube is about it for me. By the way I did use the green can.

    I line Airfryer with parchment paper (crumple to make it more placeable) to avoid contact with toxic non stick coating. Possibly not stick to pan either.
    I wonder if reducing cheese and adding pork rind powder would make difference?

    You can put a little piece of parchment paper down in the air fryer. doesn't "fry" as quickly but keep it from sticking.

    All wood is cellulose, but not all cellulose is wood. That being said, the Keebler rice crispy treats literally puts saw dust in to the treats.
    For the canned parmesan ch eese, it might be a different cellulose. Also, that cheese is completely dry, add the cellulose to that and it essentially acts like a flour.

    So a thought. If you want to go 100% parm, how about whisking in just a tiny amount of coconut flour to help absorb the liquid? And yep, I knew you weren’t using enough cornbread flavoring lol. Looking forward to trying this recipe!

    I feel like these could be more like red lobster cheddar Bay biscuits....maybe could be made a little larger and used as a bun? I'll be trying these asap

    I love making these. So delicious. I just use the whole egg though. White and yolk. Never could figure out why the recipe calls for only the whites.

    You should call them South American cheese bread! That is what they look like. I can find them at Trader Joe’s and these would be so much cheaper. I am going to have to try these. They look so good.

    Where I'm from Hush Puppies are shoes, so I was a lirrle taken aback with the title of the video LOL They look great though, I will be trying them.

    I think I would try the Parmesan cheese that is sold at Trader Joe’s in the refrigerator section. It’s sold in a plastic container and is a much better product than craft.👍🏻👍🏻✌🏻

    I had hush puppies for the first time (in a restaurant in Memphis) recently and they are really yummy! I love all the different flavorings you use to doll up your recipes. Let us know if you make these again with more flavoring.😊

    I'm thinking I'll try mixing in some milder cheese with the parmesan, like Monterey jack - it'll be moister, so there may be some adjusting needed, but this really looks great - thanks for the demo!

    I’m wondering if so pork rind crumbs would cut the salty cheese, maybe add some minced chives and a can of chopped clams with old bay seasoning like a faux conch fritters.
