Can you make some videos of keto battles with recipes that use oat fiber? I've recently done 2 recipes using oat fiber and like it better than almond flour.
You should try it with the expensive corn flavoring you bought for the cornbread challenge.
Wes - did you wave at your roasted veggies as they went into the oven? If so, that is adorable!
Some tips, if you’re going to make these more frequently….
Fathead style dough is actually easier to blend together, if you mix the almond flour and shredded mozzarella, before it goes into the microwave. Mix together when still “dry”. Melt 30 seconds… then fold with a spatula… melt another 30 seconds and then fold again… and so on… until the cheese looks like it’s melted enough and you can finally just fold it into a smooth dough. The whole process makes it easier to combine the 2 ingredients (and seasoning.)
If you get yourself a tortilla press… the hassle of rolling out the dough is also avoided. I have a 6” aluminum one, I think it was from “Harold Imports”… from Amazon… which is great for soft tacos… and I have a 10” cast iron press, (no name?) which is great for decent sized tortillas. And if you get yourself some size appropriate round parchment papers, and place 2 between dough ball and press… clean up and handling is also easy peasy.

I think docking the first ones all over with a fork before baking would help the crunchiness

I've cut up store-bought low-carb tortillas, sprinkled on some spices, baked until "done" (don't remember what "done" was). Tasty, crispy and held up pretty good.
Maybe poking that first dough with a fork would help crisp along with higher temp, shorter time.
I'd love to see a keto frosting recipe (vanilla/chocolate). I watched your chcolate cake battle, and I'd like to see what frosting to use!
I think in one of his videos he mentions frosting being a trigger for him
For frostings either use cream cheese, whipped cream, or a ganache. Ganache can be whipped fluffy when cool if you want.
I make KETO "Cheezits" with almond flour & extra sharp cheddar cheese. When you were making the 1st recipe that was the 1st thing that came to my mind. Super easy & I always have the ingredients on hand...
I would do the 2nd recipe but instead of olive oil I would use bacon fat or lard (no longer vegan, I know!) and 1 or 2 oooflavors cornbread drops. I think that would make them taste very much like an authentic tortilla!
Just in time! I bought a big thing of my grocery store’s fresh salsa and while I’ll use it on eggs, etc, I was really thinking I needed to make some chips to go with it! I usually end up tossing leftover salsa and I’m determined to be better about wasting food. Then here you are - like a knight in a black tee shirt - to save the day! 🥰

Great video Wes. Thanks. I had a thought that, if anyone has a tortilla press, that it would work for making the dough thin and round. Especially for the second recipe, you could divide it into 3 balls and then flatten. 😀

Hey Wesley! Have you ever tried using a silicone mat on the countertop with a piece of parchment on top of the dough when rolling out? It alleviates the problem of everything sliding on the countertop when you use your rolling pin. MUCH easier!😊
My thought too it works well and no sticking either.
Can wipe the counter with a damp cloth too, to get the bottom paper to stay put. :)
I am glad i'm not the only one who made diamonds instead of triangles. My brain went dead on how to make triangles and i had to have my daughter help me LOL! i've been out of school for to long.
Yay! I was just looking for a chip like substitute for nachos! I wonder if you perforated the cheese based one with a fork like for a blind baked pie crust if that would avoid the bubbling?
I've always mixed my cheese and almond flour together in the bowl first and put it in the microwave mixed already; which makes kneading it into a dough way easier. Never had it clump, because I #SiftYall. Is there a specific reason why almost everyone I see melts the cheese first then adds the almond flour???
I’ve found that if I throw chips in the dehydrator, that can really help crunchiness.

I vote for the 2nd recipe because of the crispiness. Since I absolutely HATE rolling out dough, I think I'll try dividing it into several balls and pressing them in my tortilla press. Thanks for the video!

Frosting: 1/8 stick butter, one half pkg cream cheese, 1/4 c confectioners swerve, and vanilla or cocoa pwd. Mix well.
Quantity of ingredients will change depending on what you are frosting, but I, too, use this combination. If necessary, add a tablespoon of heavy whipping cream for better spreading consistency.🙋

We make chips using Joseph's brand Lavash breads from walmart. (Red/clear package, large rectangle thin flatbreads) cut with pizza cutter, toss with oil and spice, bake 6 mins at 350

I've made the fathead based ones a few times, I put them on a wire rack in a low oven for another half hour or so to get them crispy. They're actually amazing then.

Just use low carb tortillas and cut them up and bake them until crisp, spray some avocado oil or corn oil and add some salt. Fast, easy, crispy.

Thought the same thing, but I think you’d have to put a teeny amount in since that’s a fresh, sweet corn flavor instead of the dried corn used in tortilla chips…
With the 1st ones that you said was like a cheese cracker, use a fork and poke holes in it. That should take care of that puff it gets. It's kind of like what you do for pie crust.

Helpful tip: When making fathead or cheese-based dough... Mix the almond flour with the cold cheese and microwave them together. They blend together MUCH easier and quicker! With traditional fathead, mix the cream cheese in before heating, but add the egg afterwards.

With fat head dough I've found that if you put all the ingredients into a food processor and pulse then microwave for 15-30 seconds its WAY easier to mix and deal with. So, literally put all your cheese, almond flour, egg, etc.. and pulse then microwave.
A snack I wouldn’t feel guilty giving my grandkids.
16:03 "Behaving like it should" I know, right?! I've spent so much time trying to research other options. This is what I was looking for becuase it was simple. I tried the 2nd recipe. Mines didn't come out as crunchy. But I don't know if certain altering options was the reason. I didn't have parchment paper, so I used foil. the Almond flour I used wasn't as light in color as yours. So, i wonder if I need to use a different brand. The problem with me is when I eat guac, I must have something crunchy to eat it with. I'll continue to experiment.

I've tried making low-carb tortilla chips from store-bought low-carb tortillas. Some are better than others, but I've found baking them works better than frying. I'm going to try these out. Those cheez-its have my name on them :-D

I had the same problem with mozerella...very few crisped up. I made some with lupin flour as the base..adding çhili, garlic and onion powders...lol it was the best flavor and texture I've experimented with so far.
I would love more info on your lupin flour cracker.
@@susancochran2826 Hi Susan, I use mountain house lupin flour...as far as I can tell it's not bitter but this is my first rodeo with any lupin flour, Ive heard others says some brands are bitter, from what I can tell this brand is not.
I would start of with small batches of say a half a cup to dial in the flavor you like. Start with 1/2 cup of lupin flour and add 2 teaspoons of xantham gum, as to spices I used some bob's red mill ground flax seed,( a couple of teaspoons should do in a 1/2 cup increments) chili powder, garlic and onion powders and SMOKED paprika....a little salt too...I guess any spice would work if you liked it. I wet it with enough water to make a stiff dough but as you probably know xantham is sticky to deal with....anyway let it all rest for about 10 min then make dough ball about the size of a golf ball. I then press them in a tortilla press between two sheets of parchment. I make them about an 1/8 inch thick. I cut them into pizza shaped wedges with a pizza cutter wheel. Bake them in middle rack at 375..I cook them for 15 mins then turn the oven down to 170 and let them slowly crisp up...I also flip them over after the first 15 mins....I just take one out and test them occasionally to get the crispness I like, once I get them where I like the texture i let them cool and put them in a zip lock bag and toss them on the kitchen counter for when I need a snack. So far lupin flour has personally given me the best results for making tortilla chips.

For the Big Mans chips, maybe leave them to cool in the oven?
Or just cut the diamonds in half and separate the pieces on the sheet. Bake time would be less, but they’d be smaller so less pouf in the center I’d think plus more exposed edge surface to brown.

I'm sure these are wonderful but I just get a pack of the low carb ones slice them into 8 pieces and fry them in some avacodo oil only takes seconds and season them to taste. Thanks for what you do have taught me so much about keto.
TIP: I have tried my hand at creating my own cracker/chip recipe and after baking, I would lower the temp of the oven to more of a dehydrate temp (140 degrees) and let the cracker/chip hang out in there until it was crispy how it should be and so it wouldn't burn.
I now own an air fryer and am wondering if I just popped them in there if they would crisp up even faster. I will have to try that.
It's still NOT a tortilla chip... but like you said... it's a vehicle to getting the toppings in your mouth and I miss nachos all the time! Thanks for reviewing these recipes!

I love flavor gods I have so many different flavors. I can literally melt cheese in a pan and make a snack and put on the pizza flavoring. I love the Cajun I love the everything and the spicy everything. The buffalo wing is pretty good to all of their spices are awesome
