Vegan Cheesecake - Delicious

- Vegan Cheesecake! I was excited about the very notion of this when I went vegan, I didn't expect to be eating such things, let along have them taste so good! This is the classic cheesecake recipe I use - vanilla and berries. Is pretty simple, more affordable than conventional cheesecakes and super delicious - so I hope you enjoy it
Vegan vanilla berry cheesecake
base
- 3/4 cup oats
- 1 cup almond meal
- 1/3 cup dates
- 2 tbsp coconut oil (really like this coconut oil)
- salt
bake 15min 180degrees
filling
- 1 can coconut cream
- 1 cup raw cashews - soaked for couple hours+
- 4 tbsp maple syrup
- 3 tbsp lemon juice
- 1/2 vanilla pod beans or 1 tbsp vanilla extract
freezer 15min to firm up
Jelly
- 2 tsp agar agar powder www.iherb.com/now-foods-real-f...
- 2 cup berries
- 2 tsp some kind of sweetener - sugar, agave, maple…
mash berries, dissolve powder in that liquid, heat up to simmer for 2-3min, cool then pour. Refrigerate for at least 4-5 hours

I tried a vegan cheesecake for the first time the other day that made me think about changing my diet. It was SO delicious I couldn't believe it, plus the amazing feeling of enjoying a dessert that didn't required to harm an animal.

This is the best vegan cheesecake I have tried....ever!! Thank you!! Much lighter than the usual cashew based cakes. Just thought I should let you know that when not using the Trident brand of coconut cream it doesn't set very well and needs extra cashews to achieve the right consistency. WIth the Trident coconut cream however it turns out absolutely perfect as it is :) Thought I would mention this in case someone else has this problem...

This looks amazing! And the fact that no dairy was used makes it a 100 times more better.
If you're from the UK you can actually still use digestive biscuits as a cheesecake base. Just buy supermarket own brand ones as they usually dont have milk powder. Plus they're always way cheaper than Mcvities.

+simply.s Co-op and Waitrose diegestives are sfv at the moment, but supermarkets change their own-brand ingredients quite frequently, so you must always check.

+simply.s oats and almond meal are way healthier than processed wheat biscuits though. Depends if people want to eat clean with it too
You could actually also your oreo crumbs mixed with vegan butter for the crust part :)
Wow what a great no-bake cheesecake!! Regular cheesecakes are soooooooo HARD to make - without cracking the middle, burning the base, all that jazz - this sounds right up my alley! Even though I'm not vegan, I could see myself giving this one a go! Thanks

I had to improvise for the coconut cream.
I used coconut milk powder with a little water until it had the right consistency. It came out great.

Vegan cheesecakes can be very expensive to buy, so this is great for special occasions when you want to make something to impress those who have never tried vegan cheesecake.

No Coconut cream in my area either? We have Coconut Milk in a can. Can we refrigerate the can and scoop out the cream from the top? If so, how many cans would we need to be equivalent to the amount of cream you used in the recipe? I really want to try this! :-)

What is your best substitute for Cashews? Love the recipe, but I'm having problems with cashews.
What blender do you use? Is it a high power one? Cause I don't know if my blender could make that crust since there's barely no liquids.
