Me too. In my local supermarkets have really good veggitarian & vegan stuff. I prefer Linda marcartneys veg sausages rather then actual sausages made from meat. And I like having a home made veggie curry instead of having a meat one. There's quite a few Indian restaurants near me that are just vegetarian which I like especially if they have a Casava dish that I like not sure what it's called though

just decided to go vegan after many years and my daughter convincing me that she wants me to be alive . I have diabetes and I may have some kidney trouble as well. She made me watch the movie "What the health?" and that was the moment that sold me to change . The irony is that i am a chef and i am a specialist in processed meats . i now have a philosophical and ethical conflict now to continue promoting product that I feel is ethically wrong to use and very unhealthy. i feel i have been misled and misled many people about eating meats . i hope i can do this , i must do this. thanks for sharing your delicious recipes
Going vegan has nothing to do with being alive. One should simply remove the sugar,gluten consumption and processed packaged products and that's it. There is nothing wrong with meat( especially fish ),eggs, moderate amount butter or homemade prob. yoghurt + honey, if you know where they are coming from. Do these people think all legumes are super protein subs and healthy as hell? Of course not ! Do you not know having sugar pumped smoothies everyday actually kills you as well? Are you actually not aware of the majority of vegetable - cooking oil are diseases themselves? I understand and TOTALLY RESPECT veganism, whether being a political or animal rights perspective, financial causes or environment etc... But vegan doesn't mean healthier than every other option. Please stop sjw-ing about this and actually learn the basics and see a professional ( functional medicine expert or nutritioanlist + dietician, preferably specialised in auto-immunity and cancer )

Just made the minced "meat" for dinner and ate it inside veggie wraps and it was DELICIOUS! Thank you so much for the recipe as I never liked tofu nor knew how to cook it to make it tasty. Will fur sure be trying the meatballs and sausages. Love from Spain!

I like these vegan recipes because then I won't feel left out, it would be a funny prank, and I won't be violent and eat animals. So I really do appreciate these vegan recipes. I am vegetarian since 1994 and i did it for health and ethical reasons. I am 43 (i have been vegetarian since i was 18). I ate meat because i was forced to but as soon i was capable of making my own decisions i went vegetarian. I was told by my husband when i was pregnant that i should eat meat for the baby. Fortunately, the doctor was a wise person and he told me to eat beans, lentils, greek yogurt and a vitamin supplement that had iron, zinc, magnesium, calcium and vitamin b12. Thanks to my dr. I did not have to eat meat. Get informed before you go to the dark side (like my son says. He is not a veggetarian because i did not want to impose my will to them like my parents did to me). Now that i am 43 everyone tells me that i look in my early 30's. It must be that i have not consumed any fish, chicken or fish for the last 25 years😀

When I first turned vegan I used nutritional yeast in place of parmesan cheese on pasta (I now use ground-up nuts too). It's also a source of Vitamin B12 but only if it's fortified with it. B12 is light sensitive so best to keep it in the fridge. I just found the website "Vegan Health," which has a very thorough explanation of this topic.

I love your videos and thank you for this one as well. Though I'm no longer a vegetarian, I am very conscious of the meat in my diet. Yes I do like the taste of meat. However, knowing that over half of the animals that are slaughtered for meat in the US are killed for nothing, ie, wasted food, makes choosing to incorporate meat substitutes a constant quest for me. Love the sausage technique - will make some up for Sunday's breakfast. :)
How do you know the vegetables you buy are grown/collected by workers that are not being exploited? I care about animals but I also want to know that the vegetables I consume are ethically collected.

MrHayden1122 no, you need to use Vital Wheat Gluten for the sausages. It's different than regular flours or GF flours. VWG is the isolated gluten from wheat flour.
My container of nutritional yeast says it looses it's nutrition if you heat it over 100 degrees. so do you add it just for flavour? or are there different types that can be cooked

How much of seitan can you eat. Because it contains gluten. And if you can’t eat gluten, what other alternative do you have. I got a little bit scared when i knew about seitan. But it lookes good.

This is a wonderful video ... A terrific subject matter. I'm vegan for a year and a half...and need to explore this options...fruits veg and grains...in simple form...seem to make me feel like I'm in such an isolated bubble....I need to crack open my vegan cookbooks and online resources and make more emotionally satisfying dishes.

My main problems with "recreating" meats in a vegan way is that I don't want to eat soy, I have an extremely small food budget, I don't want to buy things with plastic packaging or other types that cannot be recycled (unless I have absolutely no choice) and I don't have that much time to cook. Does anyone have recommendations for me, to make meat tasting (don't care as much about the texture) vegan substitutes ? Or maybe some handy links ? Thank you :)
Legumes, nuts, seeds, mushrooms, rice, vital wheat gluten, jackfruit in brine, and cauliflower, can be used as soy free meat replacements. Legumes and jackfruit come in recyclable metal cans. Legumes also, along with nuts, seeds, rice, and vital wheat gluten, can be found dried in recyclable bags or in bulk bins where you can bring your own reusable container to put them inside of. Cauliflower and mushrooms can just be bought fresh, and I've also seen mushrooms in glass jars, or dried in recyclable bags. It's really about spices and preparation. Salt and/or coconut aminos, tomato, liquid smoke, apple cider vinegar, balsamic vinegar, onion or onion powder, garlic or garlic powder, celery, cumin, nutritional yeast, paprika, black pepper, oils, and many other herbs, spices, and sauces, can be added to these foods as a marinade and/or used in breading, or simply mixed in otherwise during the cooking process. I've never personally used vital wheat gluten, but there are a lot of recipes using it online, and the other options I've listed here I've had a lot of success with.
I love the sausages you made, usually the recipes say to bring water to boil and when I cook the setaIni it comes out watery and VERY soggy. Have you made those sausages without the cheese cloth? I don't have any but would love to try that recipe! xox
I totally get you, and I'm vegan too and slowly my flatmate is coming to the point that animal products are not the best for the environment but there is enough food for everybody in the world. the problem is that most food gets wasted and thrown away and it won't change because more and more are going vegan. There was a butter crisis in Europe some years ago and instead of taking the butter and sending it to places where it's needed, it was destroyed (If I remember correctly) That France now banned food waste and food-sharing groups are growing in Germany is awesome because like that, there is less food wasted and I can go to a bar every Tuesday where several people picked up bread, salads and a lot more stuff that couldn't be sold in the normal store anymore but is basically perfectly fine. overripe bananas e.g. so I got ice-cream for free! This idea has to grow in more heads because so many still have the misconseption in their head, that if something hits the best before date, it's instantly bad. that's true for some things but usually it's a "use before" date anyways. But as if pasta would care if it was due yesterday or next week
Awesome video! have you heard of pulled havre/pulled oats? It's a new meat substitute made in Finland and its made of oats and beans, very rich in protein and has a very meaty taste! It's quite new on the market and I'm not sure if there is any out there to be found but hopefully other countries will start investing on that soon! Love your videos Ela! :-)
hi... very informative alternate "meat" options. When doing your research on meat how could you miss all of the negatives about soy and tofu? (plastic,, hormone disruption, discharge, thinning hair) I have been suscribe for awhile and was gonna keep that to myself. I said why not inform her....she has informed me of several natural aspects. Hope this helps. The "rabbit" hole has many directions.
I just roll my seitan sausages in parchment, put them in an oven pan and cover the pan with alu foil and bake it in the oven instead. Works great for sausages and (un)meatballs! I think that is so much easier... 😊

can you get TVP in australia? you can get in crumbled like ground beef, or in balls, or cutlets, it's very versatile

I love your videos and thank you for this one as well. Though I'm no longer a vegetarian, I am very conscious of the meat in my diet. Yes I do like the taste of meat. However, knowing that over half of the animals that are slaughtered for meat in the US are killed for nothing, ie, wasted food, makes choosing to incorporate meat substitutes a constant quest for me. Love the sausage technique - will make some up for Sunday's breakfast. :)

They're so annoying & ram their views & diets down people's throats to the point where They probably desensitize their audience! Thank You for proving We're intelligent people! Try it! Will still taste good but the texture might be slightly different
+The Stoned Panther I just tried elas recipe and I sauted it. it came out delicious and it tasted like chorizo it was a bit salty but just add less garlic salt and soy sauce and it will be perfect. I'm defiantely making this again. thank you ela.

MrHayden1122 no, you need to use Vital Wheat Gluten for the sausages. It's different than regular flours or GF flours. VWG is the isolated gluten from wheat flour.

Hi Ela, In the past year I have been moving my diet to mostly plant based. Before I made this decision, I had learned that soy (at least in the US) in mostly GMO. Have you heard anything about this? Is it different in your country?
This is a wonderful video ... A terrific subject matter. I'm vegan for a year and a half...and need to explore this options...fruits veg and grains...in simple form...seem to make me feel like I'm in such an isolated bubble....I need to crack open my vegan cookbooks and online resources and make more emotionally satisfying dishes.

My main problems with "recreating" meats in a vegan way is that I don't want to eat soy, I have an extremely small food budget, I don't want to buy things with plastic packaging or other types that cannot be recycled (unless I have absolutely no choice) and I don't have that much time to cook. Does anyone have recommendations for me, to make meat tasting (don't care as much about the texture) vegan substitutes ? Or maybe some handy links ? Thank you :)
Legumes, nuts, seeds, mushrooms, rice, vital wheat gluten, jackfruit in brine, and cauliflower, can be used as soy free meat replacements. Legumes and jackfruit come in recyclable metal cans. Legumes also, along with nuts, seeds, rice, and vital wheat gluten, can be found dried in recyclable bags or in bulk bins where you can bring your own reusable container to put them inside of. Cauliflower and mushrooms can just be bought fresh, and I've also seen mushrooms in glass jars, or dried in recyclable bags. It's really about spices and preparation. Salt and/or coconut aminos, tomato, liquid smoke, apple cider vinegar, balsamic vinegar, onion or onion powder, garlic or garlic powder, celery, cumin, nutritional yeast, paprika, black pepper, oils, and many other herbs, spices, and sauces, can be added to these foods as a marinade and/or used in breading, or simply mixed in otherwise during the cooking process. I've never personally used vital wheat gluten, but there are a lot of recipes using it online, and the other options I've listed here I've had a lot of success with.
I love the sausages you made, usually the recipes say to bring water to boil and when I cook the setaIni it comes out watery and VERY soggy. Have you made those sausages without the cheese cloth? I don't have any but would love to try that recipe! xox
No I haven't done it without cheese cloth, but some recipes use foil so if you has that you could steam them that way Xx

I totally get you, and I'm vegan too and slowly my flatmate is coming to the point that animal products are not the best for the environment but there is enough food for everybody in the world. the problem is that most food gets wasted and thrown away and it won't change because more and more are going vegan. There was a butter crisis in Europe some years ago and instead of taking the butter and sending it to places where it's needed, it was destroyed (If I remember correctly)
That France now banned food waste and food-sharing groups are growing in Germany is awesome because like that, there is less food wasted and I can go to a bar every Tuesday where several people picked up bread, salads and a lot more stuff that couldn't be sold in the normal store anymore but is basically perfectly fine. overripe bananas e.g. so I got ice-cream for free!
This idea has to grow in more heads because so many still have the misconseption in their head, that if something hits the best before date, it's instantly bad. that's true for some things but usually it's a "use before" date anyways. But as if pasta would care if it was due yesterday or next week
Awesome video! have you heard of pulled havre/pulled oats? It's a new meat substitute made in Finland and its made of oats and beans, very rich in protein and has a very meaty taste! It's quite new on the market and I'm not sure if there is any out there to be found but hopefully other countries will start investing on that soon! Love your videos Ela! :-)

hi... very informative alternate "meat" options. When doing your research on meat how could you miss all of the negatives about soy and tofu? (plastic,, hormone disruption, discharge, thinning hair) I have been suscribe for awhile and was gonna keep that to myself. I said why not inform her....she has informed me of several natural aspects. Hope this helps. The "rabbit" hole has many directions.

I try my best to stay away from soybeans and soy based products, so the Seitan and the Nut meatball recipes are really helpful! :)

I just roll my seitan sausages in parchment, put them in an oven pan and cover the pan with alu foil and bake it in the oven instead. Works great for sausages and (un)meatballs! I think that is so much easier... 😊
